A small estate of 13 hectares, hidden in a scrubland, we produce red, white and rosé AOC Minervois. Regularly recognised through medals, we make our own wines using traditional quality methods.

Château Tourril, a family vineyard located between the Canal du Midi and the city of Carcassonne, is a little gem of 13ha set in a clay-limestone setting bordered by pine forest and scrubland which has its origins in an ancient Gallo-Roman tower located on the heights of the property.

  2000 YEARS HISTORY
Chateau Tourril, a family vineyard located between the Canal du Midi and the fortified city of Carcassonne (both on UNESCO's World Heritage List), is a small 16ha jewel nested in clay-limestone corrie surrounded by shrub-land and garrigue. Its name comes from an ancient gallo-roman tower standing on the heights of the estate.

ORGANIC PRODUCTION
The whole production process is conducted organically at the Château with no pesticides. The vineyard is under AB certification since 2016.

TOP TECHNOLOGY
The latest facilities and techniques enable our Syrah, Cinsault, Grenache, old Carignan & Roussanne grapes to give birth to authentic, terroir and quality long lasting wines.

Stephan Kandler has taken over the management of the family vineyard in 2014 after a professional sailing career including the participation to the America's Cup.

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

There are thousands of grape varieties contributing to a vast array of different wine styles with each variety having its own distinct flavours and characteristics. Varieties can be made uniquely to make a wine, in whch case the wine is known as a varietal, or collectively with other varities, when the wine is known as a blend. The soils and ‘terroirs’ in the Aude area are very varied, from Schist, Sandstone, Marl, Gravel, Pebbles, Limestone, to Granit and Alluvial soil; thus making many marvelous and different styles of wine. Also in this massive area are many different grape varieties, the reds include Carignon, Cinsault, Granache Noir, Syrah, Mourvèdre, Cabernet Franc, and Merlot. The whites, Chardonnay, Granache blanc, Picpoul, Marsanne, Roussanne, Vermantino, Mauzac, Chenin and Clairette...

We deliver bikes to you! You’ve got your bike - now where do you go? When you hire your bikes, you will be given a number of suggested routes together with large scale maps. The routes will always be on quiet roads and tracks and are graded according to terrain and distance. We are constantly adding trips starting at different villages and towns in the area. Some will be suitable for the whole family, whilst others are geared for road or mountain bike enthusiasts. Starting in 2012, a bicycle GPS is available to rent. This has all of the rides saved on it, and will be particularly useful for road bikes that don’t have mapholders.

It sails on three canals: the Canal du Midi, the Canal de Jonction and the Canal de la Robine. People come here to live one moment at a boat out of the ordinary! For it is especially user-friendliness in question. "La Capitane" navigates from the Easter holidays to autumn holidays. The " Café du Port" is a "Slow Food" Bistrot. It is open daily during the season (Spring to October). Our "Cuisine du Marché" is Mediterranean. In our dishes we use the best and freshest regional and seasonal products. All our food is prepared fresh and "in house". Every dish is made to order. We offer sophisticated and simple wines of the region: Minervois, Corbières, Languedoc. We aim at offering good meals with the subtle tastes and pleasant fragrances of the "terroir", presented nicely in surroundings reflecting the south....

Le Somail is a port on the Canal du Midi built in the seventeenth century. It’s near the town of Ginestas in the Minervois and these days is a rapidly expanding village. Originally it was a small hamlet around the port itself but today it’s something of a tourist attraction. Other attractions include a brightly-painted barge which is a floating grocery store and an amazingly huge emporium of second-hand and antique books. They profess to be able to get any book you’d like to order – and in any language. It’s quite fascinating watching the pleasure craft go by whilst eating on the banks of the canal. We finished our day by taking a little motor boat (it was a little motor, as well as a little boat…) for an hour. The peace and stillness of the Canal were lovely but we did also enjoy squinting into the portholes of some of the more luxurious boats moored along the banks…
