Sylvie, Eric and David Latham family-lead this domain of ​​130 ha in part on the soil of Boutenac, origin of the greatest wines of the Corbières. Discover the history of the passion of the family since 1973 and follow us the manufacturing of wines.

The Chateau, not far from Thézan-des-Corbières, is nestled among the vines, wrapped by two hills- one side of which belongs to the massif of Corbières and the other side Mount Sainte-Victoire.

The calmness of Saint-Esteve is only interrupted in summer by the singings of cicadas, winged pipelettes perched on the majestic pines in the domaine. There, they can admire the scrubland, the blue sky, protruding rocks, and a magnificent wilderness. Lavender, thyme, and rosemary spread sweet scents and subtly delights the senses. In the park, near the Lady Chapel, is a spring of water to complete this oasis of peace.

The mechanical grape harvests are followed by a traditional wine making during which a cold pre-fermentation maceration is realized aiming to extract a maximum of fruits and soft tannins.
 
  Specialties

Here, the climate is clearly Mediterranean, with the big blue imposing majestically on the road here and in the distance. The sea, as well, provides a natural moisture. The amount of sunshine is generous and optimal for the maturity of grapes. The north wind, an exhilarating wind that significantly reduces fungal diseases of the vine, is the second component characterizing the climate of this area. This reduces the necessary processing for the protection of the vine. The soil types in Saint-Esteve are clay, chalky, and stony, with occasional rolled stones formed in Boutenac, especially. Soil is deep, allowing vines to obtain a good level of maturity and a longevity of the vineyard. The vineyards are located mostly on slopes facing the south. To find the coolness, the vineyard is nestled at an altiude of 300 m, as in Mandourelle.

Carignan and Syrah grow on the lands of Saint-Esteve in a large majority, and in Grenache Noir, Grenache Blanc, Mourvedre and Cinsault (varieties of the AOC) as well, but to a lesser extent. Cabernet Sauvignon, Merlot, and Caladoc are also present in addition for the production of IGP wines. The red varieties dominate the color palette. However, a touch of white wines are added during the year, such as the Chardonnay, Grenache Blanc, and Muscat. Saint-Esteve Castle identifies with the fifty year-old Carignan and Grenache, as well as Syrah, which is more than thirty years.

The Corbières is one of the wildest areas of France with one of the lowest population densities. It is picturesque with wine growing areas alternating with garigue and mountainous countryside. It is located mainly in the Aude département and partly in the Pyrénées-Orientales département. The River Aude borders the Corbières to the west and north. To the south is the River Agly and to the east the the Mediterranean Sea. The name Corbières comes from "cor" a pre-Celtic word meaning "rock" and "berre" from the River Berre which runs through Durban. The eastern part of the Corbières with its Etangs, borders the the Mediterranean Sea and is called the Corbières maritimes. It has its own distinctive climate and characteristic vegetation known as thermomediterranean vegetation...

If you love excellent food and wine, then there can be no finer restaurant in the South of France as Auberge du Vieux Puits. This 3 star Michelin restaurant is run by the celebrated French chef, Gilles Goujon. I can not recommend this restaurant highly enough. The food, the service, the wine, the cheese . . . all were excellent. Nobody has given Gilles Goujon anything for free. On the contrary. In a bucolic atmosphere far from the mundane noise, in an austere building –sold by the tiny Town Hall– he has been progressively restoring for a decade, he has been able to captivate plenty of customers and reach the top of the French guides: 5 hats in Gault Millau and 3 stars in Michelin. We can say we are before a self-made man who had to fight and sweat blood to reach fame; a fame very few chefs deserve so clearly....
