The vine has been growing at Château Rayssac since 1873. Located in the South-West of France, more precisely in the Languedoc-Roussillon region, it has found in Conques-sur-Orbiel a perfect room for expression.
Framed by the Black Mountain and the worldwide known Medieval City of Carcassonne, the estate is composed of 37 hectares, of which 29 are currently planted between 460 and 600 feet above sea level.
In this natural and preserved landscape, among forests, scrubland and almond trees, Château Rayssac's vineyard is ideally set to express the best of Languedoc's terroir. Its topsoil is characterized by a deep superficial layer of limestone, which allows a perfect control of the vine's water supply.
This alkaline ground is mainly composed of shells and sea urchin sedimentation from the Tertiary. A clay-limestone subsoil allows the roots to spread deep in the ground for freshness and aromatic complexity.
Cabardès is a unique blend of Mediterranean and Bordeaux varieties : The Designation of Origin Cabardès can both be considered as the westernmost vineyard of Languedoc and the easternmost of the Southwest wine region. This unique transitional climate combines Mediterranean’s sunlight and Aquitaine’s freshness. |

This makes Cabardès the only terroir where winemakers blend Atlantic (Bordeaux) varieties such as Cabernet Sauvignon, Merlot and Cabernet Franc in equal proportion with Mediterranean ones (Syrah and Grenache), providing to the wine the best possible balance between fruit and structure, softness and complexity, richness and elegance.
In 2011, AOC Cabardès was qualified by the magazine « La Revue du Vin de France » as the 11th GRAND CRU of LANGUEDOC.Château Rayssac produces well-built red wines, as well as some fresh and delicate rosé. Because of its concern for quality, the yields are between 35 and 45 hectoliters per hectares picked up on 20 and 40 year old vines, for a total of 100 000 and 150 000 bottles per year. The vinification method is traditional, with a long fermentation.
Our wines do not age in barrel in order to keep grape's natural flavours intact. They are carefully brought to maturity in concrete vats, allowing the right amount of oxygen as well as a control of temperature. Their powerful and very aromatic structure reveals a deep fruit with almond, thyme and earthy notes...

The Cabardès region is situated to the west of Languedoc and to the south of the central massif, a geologist's dream, balanced between east and west, the sun and the coolness, the heathland and the mountain. It is here that the winds cross. They bring the intense mediterranean heat necessary for southern "cépages" (grape types) such as syrah and grenache, and the cool atlantic humidity for the ocean "cépages": merlot, cabernet-sauvignon, cabernet-franc, cot and fer-servadou, to prosper. The vineyards and wines of Cabardès have been recognized as AOC since february 1999. The quality of the grapes, the wine-making, the blending of the "cépages" and the keeping of the wines has allowed us to obtain the best balance between fruit and structure, fullness and complexity, intensity and elegance. Cabardès assembles 30 châteaux and domaines over 500 productive hectares spread amongst 18 villages. 20000 hectolitres are produced each year,of which 60% are exported....

Laure-Minervois
Fortified village, the village of Laure was surrounded by ramparts and a moat. Two towers attest to the ancient fortified wall (Tour Bousquet - nine Portal Tour).
The Gothic Church of St. John the Baptist, was rebuilt several times. Some remains: the Church of Buadelle and Romanesque bell tower of Saint Jacques d'Albas.
The Mézolieux round: this monument of Gallo-Roman origin is surrounded by vineyards on the old Roman road (Che-min Romieux). Grave of Saint Eugene: this dolmen located in the wood Russol is a vast burial ground dating from the mid Neolithic.

Just a few years ago le Moulin Sainte Anne was a vineyard but, with much hard work by Antoine and Magali Laclive and the backing of the Mairie, there is now a flourishing campsite on the edge of the town. There are 45 level grass pitches of a good size and hedged. All have water and electricity and are terraced where necessary and landscaped with growing trees and shrubs. The facilities are modern, well kept and in keeping with the area. They include a heated pool and a very attractive entertainment area. There is close co-operation with the village and villagers are welcome to the evening entertainment...

Auberge de Clamoux, a small inn that serves a fine three-course weekday menu at 13€. Go ahead and try the salad with gesiers (duck gizzards, a regional favorite) or sample the offering of charcouterie (hams, sausages, etc). The main course is generally meat, duck or salmon, and the desserts are impressive. One lunch time here, the main dining room had been converted to a huge table seating several dozen French men and women in their 70s and 80s, plowing through huge platters of food and liters and liters of wine. Every meal in France is a celebration. Count on at least an hour and a half....

Just east of Carcassonne, is the lively village of Trebes, with shops, an art gallery that shows international artists, swimming pool, a bridge with a view of the river Aude, and last but definitely not least the Canal du Midi. Walk along the canal, and you will see a myriad of boats, moored or cruising along the canal. Directly on the Canal du Midi at the Trebes Lock, this very pleasant restaurant offers great food in a peaceful setting. Both indoor and outdoor seating are available. The chef does a wonderful job of using fresh, local ingredients to show off the cuisine of this area of France....

Serge and Martine Berard had already forged a reputation when they created the restaurant "Pepone" in Carcassonne. After some sabbatical years they reopened the "El Campo". Double side kitchen menu offers a wide selection pizzas, homemade fresh pasta, carpaccio or platos combinados (which constitutes a full meal), tapas (hot or cold) and other dishes just as tasty as each other. Conclusion: you must return to discover everything. Add to that a lovely host and theme nights off and we can only rejoice....
