At the heart of Clape was built on a rocky pedestal and plant the Pech Redon area, away from noise and vicissitudes of the urban world, the center of a fauna and flora of paradise, the raptures of colors and Mediterranean scents.
Secret stone watchdogs, where history and time have left their footprints these petrified giants, this refuge is dedicated to lovers Epicurean tranquility and charm.
The serpentine road that leads to the area offers a spectacle of incredible splendor gaze then plunged across the Narbonne area to a sea that binds with the horizon. Communion is perfect between man and the world that awaits him.
Château Pech Redon represents 30 hectares of vines (28 red and 2 white) and its production is about 70 000 bottles per year. In this unique setting, the idea to respect this wilderness has imposed itself. Château Pech Redon has turned its back on chemicals by 1998 by switching to Farming then certified by Ecocert Organic Agriculture in 2005.

Specialties
Switching to organic farming has helped to revitalize the soil to gain balance and energy in wines and allows the Bousquet family to live in symbiosis with the landscape surrounding it. The varieties
of Pech Redon grown are mainly: Grenache, Syrah, Carignan and Mourvèdre for red wines; Bourboulenc and Grenache Blanc for the whites. Yields are of the order of 25-30 hectoliters per hectare.
Harvesting is exclusively manual and harvested in crates 15kgs.
The whites are pressed whole, only the first juices are used. They are racked cold withdrawn after 24 to 48 hours and in fermentation without addition of yeast and under controlled temperature (17 ° to 20 °).
The rosés are obtained by bleeding after maceration of 10-14 hours for Syrah, Grenache and Cinsault. Part of Cinsault rosé is obtained by direct pressing.
The Reds are de-stemmed and crushed, then they ferment without addition of yeast to ensure the extraction of color and tannins, and then reassembly and punching are provided alternately. Maceration of red lasts 25 to 40 days after the grape variety and vintage. Language(s):

Le massif de la Clape

Narbonne

The La Clape AOC is located where the Coteaux du Languedoc and Corbières appellations overlap and is well known for its vineyards that lie on a limestone outcropping that extends across the entire region. The region produces red, rose and white wines that are fully representative of the region and the reds show particularly well, often times considered a vin de garde. The majority of the wines of Gruissan are produced on the Clape. This little mountain, situated between Narbonne and Gruissan was an isle at the time of prehistoric man. The Clape, gets its name from the Occitan word « Clapas » meaning a pile of stones, and reaches a height of 214 m. The pine trees cover the slopes of the Clape. The garrigue covers the plateaux and the thyme, the rosemary and the lavender that invite you to promenade are what give the wines their character...

The cornerstone of organic farming is the soil. Maintaining a healthy, biologically active soil is the main objective for an organic farmer. In the vineyard it means cultivating the soil and planting cover crops, instead of applying herbicides. It means using natural fertilizers, such as composted animal manure, versus chemical fertilizers. Organic growers use no synthetic growth-regulators (such as Alar). As for not using pesticides, the organic alternative is to encourage natural predators of insect pests instead of using poisonous insecticides. Organic farmers promote "biodiversity" and allow plants other than vines to grow in and around the vineyard. Biodiversity helps regulate the vineyard soil by attracting beneficial insects, spiders and predatory mites, as well as provide shelter and food (pollen, nectar and other bugs), and replaces the need for chemical pesticides or insecticides. What cannot be fully controlled through biodiversity can still be managed organically, through the use of naturally occurring plant or mineral extracts, which leave no residues in the soil. In wet climates the main difficulty is raised by the use of copper sulfate against mildew, which leaves over time levels of copper in the soil that need to be monitored....

Cathédrale Saint-Just et Saint-Pasteur |

|
|
The High Gothic style of the Cathedral of Saint-Just and Saint-Pasteur takes its inspiration from the great cathedrals of Northern France. Its most striking feature is its unique choir, with vaulting soaring to more than 40 metres. It was built between 1272 and 1340 and remained unfinished because, in those troubled times, the Consuls refused to demolish the ramparts to provide stone to continue building. The side chapel, dedicated to Our Lady of Bethlehem, has a 14th-century altar-piece in painted stone. The Treasury, also known as the acoustic hall, displays a rich collection of liturgical objects, including ivories, gold and tapestries....
