Wine !
Its been a family matter for so long... When do we become a winemaker ? The day we start making wine or...., maybe from growing up within the vineyards and the cellar, and following each harvest? From the moment we learn to walk we are carrying the hoses, removing the trims, and washing the cellar etc, and while we are learning how to write, we mark the name of the varieties on the vats with chalk. We develop our senses with the smells and tastes of the aromatic wines, and we learn how to make decisions and to give our opinion during our maturity. Time moves on and we build up a knowledge of where ideas and results have been opposed many times. Each season is different and yet similar, hence the importance to keep the traditional experience, and absorb it and follow up on solid basis while adapting new methods and techniques to the laws of the earth.

All the AOP varieties are trimmed according to the cordon de royat shape, with the exception to the Carignan where the gobelet shape is used. The simple Guyot (6-8 buds) is used for the white and red vins de pays. It suits our varieties. The gravel soils are sensitive to drought. We worked the soil by breaking apart the blocks of earth in winter. In summer, we aerate the soil by tearing the weeds off with the plough, the scrape and all other traditional tools. The choice of old traditional tools are chosen to mimic the past but because they are really the most efficient for these lands.

 The terroir of La Grave
The property stretches over 90 hectares, 45 of which are Minervois appellation..
The soil is split into two areas : the fresh land and the arid land.

The Fresh Lands.
To the north : the land for the whites. They are made from wet clay thanks to a natural supply of water. The clay lies on banks of sandstone. Water is also retained by the sandstone in the upper layers of the subsoil. This alchemy protects the vineyard from drought and ensures very good acidities whatever the vintage. Old Maccabeu, white Grenache , Marsanne, Sauvignon and Chardonnay are suited best for these soils..

The Dry Lands
The arid lands. To the south : for the reds. They are covered with large and small gravel stones hence the name of the property (La Grave). These lands are light and aerated. The stones shield the sun as well as they hold the evaporation. This is an ideal location for the reds, including the Mourvedre despite we are close to the limit of where it can climatically grow. The earth is hard to work. It is abrasive and it wears easily our tools. As like throughout the Minervois, the subsoil is various. To the scale of one vineyard, one may find all the different soils existing in the Minervois. It is the essence of the Minervois to show micro-terroirs within small areas. The gravel stones remain on the surface and underneath are of much smaller gravel mixed with clayish-calcareous soils. These soils are dominant, and sandstone and marl also exist in some places.

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

Château de Miramont is located on the slopes of the Montagne d'Alaric, a few kilometers from Carcassonne. It is reached by the tourist road between the villages of Monze and Barbaira. The castle dates from the eleventh to the thirteenth century. It is in ruins, but we still see its general organization: a central tower which remains a part of a vaulted room and an outdoor enclosure on which are backed various buildings. Château de Miramont is located in a very advantageous position overlooking the Aude valley. The remains of the Château de Miramont backing the northern flank of the mountain Alaric, 4 km southwest of the town of Barbaira. Standing on the isolated plateau, at over 300 meters above sea level, this site is a perimeter protégé. Du top of the promontory, the view embraces a beautiful landscape formed by the Aude valley, the reliefs of the Minervois up the bar of the Montagne Noire. Today we can say that the remains that still remain, were built on the king's castle bases Visigoth, Alaric II. Built on a strategic point, the building was probably built by the lords of Capendu in the early Middle Ages. Starting Barbaira (Place du Foyer). Go under the railway and take the side stones, route of medieval origin. At Place du Four, take the street Carrayrat and leave the village. Go under the motorway and turn right for about 300 m. Turn left, then right on a slightly cashed path, bordered by low walls. Follow this path until the lime kiln then parking of the nursery.
