The Cabardès appellation is located on the southern slopes of the Montagne Noir, the most southern outcropping of the Massif Central and just outside the medieval walled city of Carcassonne. One of France’s newest A.O.P.’s, it was established in 1998 and has fewer than 20 estate bottled producers. Its unique climatic situation with influences from both the Atlantic Ocean and the Mediterranean Sea give rise to the appellation’s motto “Vent d’Est, Vent d”Ouest.

In fact, the A.O.P. laws mandate that a minimum of 40% of the varieties must be “atlantique”; Merlot, Cabernet Sauvignon or Cabernet Franc and 40% “mediterranean”; Syrah or Grenache; also a maximum of 20% of Cot or Fer Servadou may be used.

  The Chateau de Jouclary vineyard is planted with three of the sanctioned varieties; Syrah, Grenache and Merlot. The Merlot is the largest component and supplies the backbone of the wine, while the old vine grenache and syrah from the stony upper hillside contribute ripe flavors and warmth on the palate. The wine undergoes an extended fermentation process in lined cement vats. It then rests in vats for 12 months and receives a number of rackings before it is bottled.

The Vin de Pays D’Oc Sauvignon Blanc is grown on the lower elevations of the vineyard. Harvesting is done in the cool of the early morning to avoid oxidation and the fermentation is done at cool temperatures with some skin contact before the grapes are pressed. The wine rests in contact with its lees for several months and bottling is done in the early spring. These techniques produce a wine that is aromatic, intense and fresh.

The Cabardès region is situated to the west of Languedoc and to the south of the central massif, a geologist's dream, balanced between east and west, the sun and the coolness, the heathland and the mountain. It is here that the winds cross. They bring the intense mediterranean heat necessary for southern "cépages" (grape types) such as syrah and grenache, and the cool atlantic humidity for the ocean "cépages": merlot, cabernet-sauvignon, cabernet-franc, cot and fer-servadou, to prosper. The vineyards and wines of Cabardès have been recognized as AOC since february 1999. The quality of the grapes, the wine-making, the blending of the "cépages" and the keeping of the wines has allowed us to obtain the best balance between fruit and structure, fullness and complexity, intensity and elegance. Cabardès assembles 30 châteaux and domaines over 500 productive hectares spread amongst 18 villages. 20000 hectolitres are produced each year,of which 60% are exported....

  This little walk of an hour is suitable for the whole family. The path leads along the four castles and the Belvedere with its beautiful views. Walk is doable and marked and starts in Lastours. In the heart of the Montagne Noire, 15 km from Carcassonne formed four medieval castles the castle of Cabaret. The site is strategically located on the road from Narbonne to Spain. The castles have been included since 1905 in the list of Historical Monuments. The oldest known remains date back to the Bronze Age, around 1500 BC. In a cave has been found the grave of a girl nicknamed "Princess with the necklace". Her body was covered with objects including amber beads and jewelery from the Mycenaean and Egyptian art. Since the Middle Ages, Lastours is an exceptional property which is built at 300 meters altitude, on top of a rocky promontory. For the Crusades against the Cathars, there were three castles on the site of Lastours (Cabaret, Surdespine and Querthinheux), but under a different form than what they look like now...

Montolieu is a small, pretty village, which prides itself as being a 'village of books and graphic arts', and is a good place to browse through old books - there are perhaps 15 bokshops in the village, as well as a museum on the subject, and the possibility to learn about bookbinding. Stop anyway, even if you aren't interested in books, just for an amble around the village, in an attractive setting on a rocky outcrop between two rivers.

Just a few years ago le Moulin Sainte Anne was a vineyard but, with much hard work by Antoine and Magali Laclive and the backing of the Mairie, there is now a flourishing campsite on the edge of the town. There are 45 level grass pitches of a good size and hedged. All have water and electricity and are terraced where necessary and landscaped with growing trees and shrubs. The facilities are modern, well kept and in keeping with the area. They include a heated pool and a very attractive entertainment area. There is close co-operation with the village and villagers are welcome to the evening entertainment...

The Walled City of Carcassonne is known first and foremost as a fortified medieval town; but this rocky outcrop has been occupied by man since the 6th century B.C., first as a gaul settlement, then as a Roman town fitted with ramparts as early as the 3rd and 4th centuries A.D. On the western face of this primitive fortification rests the castle, built in the 12th century by the vicomtes Trencavels.In the early 13th century, Carcassonne was taken by Simon de Montfort during the Albigensian Crusade, then annexed to the royal estate. Fortification works lasted throughout the 13th century, with the construction of the outer wall and the modernisation of the inner rampart, making this place an impregnable fortress. The Cité lost its strategic importance after the signing of the Pyrénées Treaty in 1659. In the second half of the 19th century, it underwent a major restoration project supervised by Eugène Viollet-le-Duc and was included by UNESCO in the World Heritage List...
