A family estate since 1878, six generations have given influences and added different techniques to the process used at Château Guilhem over the years. From the 1850s, big 24,000 litre oak barrels were built in the cellar by Bertrand's great-great-grandfather; in the 1920s his great grandfather introduced concrete tanks for big quantities of high volume wines; and, during the 1970s his grandfather introduced stainless steel tanks in smaller volume, to produce more quality wines.

In 2005, with his daughter (Bertran’s mother), he removed all the old vines, replanting with Atlantic grapes such as Merlot, Cabernet Sauvignon and Cabernet Franc, which are more acclimatised to the Malpère terroir. From 2009, they have produced grapes using ‘reasonable’ agriculture, which means that they don’t use pesticides and herbicides. They are also now certified organic. Bertrand, who is the winemaker as well as the owner, is influenced by his history at the Château, and by his oenological studies.

So, he makes wine that is a combination between tradition and modernity and which respects the environment. Grapes are produced according to organic farming principles and, in the cellar no chemicals are used. It is as much as possible a natural process, with natural fermenting at a low temperature, to retain the maximum aromas, in concrete tanks for a relatively brief amount of time.

  The château itself dates from the 1870s, and on some of their labels they use an old photograph of the family from 1902. Originally the property was called Chateau Malviès, but Bertrand thought that could cause some confusion, and preferred to rename it, after the family name of his grandfather, Guilhem. In the vineyard they work organically, and the cellar at first sight looks like the classic Languedoc cellar, with old cement vats and some old foudres. However they have divided the cement vats into smaller sizes, which was not easy, but nonetheless preferable to removing copious amounts of reinforced concrete.

They also have stainless steel vats; Bertrand’s grandfather was one of the first to use them for wine in the Languedoc, in the mid-1970s, inspired by the example of the dairy industry. The next project is a proper chai à barriques. They were also amongst the first to plant Merlot in the area, again at the beginning of the 1970s. Their oldest Cabernet Franc is 15 years old. A classic Malepère blend must include at least 50% Merlot with at least 20% Cabernet Franc. Cabernet Sauvignon and Malbec are also allowed, as well as Syrah, Grenache Noir and so on, but they have none of those. The vineyards have been organic since 2010. The soil is clay and limestone with an average altitude of 250 metres.

Limoux is best known for its sparkling wine, Blanquette de Limoux. This is reputed to be the oldest sparkling wine in France and dates back to 1531 when Benedictine monks from Saint Hilaire Abbey discovered that the wine they had laid down had fermented and formed bubbles. This was the beginning of Limoux’s bubbly - the Blanquette de Limoux which was the first AOC to be created in the Languedoc area. The process (the locals say) was stolen by Dom Perignon who went on to create ‘champagne‘. however the Limoux sparkling wine is a very high quality champagne substitute and Crémant, which was developed in 1990, has a top class reputation. Now a prestigious event attracting buyers from all over the world, “Toques & Clochers” puts up for auction the most promising barrels of AOC Limoux. A share of the proceeds are then used to finance the renovation of bell towers in surrounding villages. Every year the auction is hosted by one of France’s great chefs popularly referred to as a “Toques”, the traditional white chef’s hat....

History tells us that Blanquette de Limoux, the world's first sparkling wine, dates as far back as 1531. At the time, the monks of the Benedictine abbey of Saint-Hilaire, near Limoux, were producing a somewhat unusual white wine in their cellars. Inside its glass flask, with a cork top - very rare for wines at this time - it acquired a natural sparkle. This was the forefather of the brut which is tasted today at the world's most prestigious tables. Since they first started cultivating vines, the growers of Limoux have aimed at maintaining the originality of the Blanquette de Limoux growth and developing its quality. The region's surrounding hills protect it from the extremes of the Mediterranean and Atlantic climates, with the area enjoying a microclimate particularly suitable for making quality white wine. The vines classified in the appellation are always planted at the top of southern-facing slopes, giving the best exposure. The soil here is shallow and sparse, full of chalk and stone....
