Jean, Sylvain, Laurent, René, Antoine and Maguy, just as many men and women who have patiently forged our reputation in this Minervois region.
With Florence, my wife, we live in this beautiful area, driven by the same passion : guiding and making grow our vines in all seasons, respecting every variety, every vintage, constantly adapting to the vagaries of the climate and the needs of the soil to achieve excellence.

To be a winemaker is first of all the understanding that everything starts with the soil and the constant attention that is given to it, from pruning to harvesting. This wild nature, this rebellious land; we listen to it, we respect it, by minimizing the treatments, by preserving the biodiversity of the vineyard and by controlling the yields. Maintaining a perfect balance between love of nature and wine growing technology, our wines perfectly express the typical character of our “terroir”. The white wines are full of fineness, the red wines are characterized by their elegance thanks to the manual “pigeage” (a gentle immersing of the grape skins during fermentation). And even if our wines are remarkably regular, every vintage is a new challenge, a new passionate encounter. To deliver ourselves from the world of appearances, to immerse ourselves in pleasure and pure sensations, this is our Credo! |

With Florence, my wife, my father and our team, we cultivate our vineyard and grow our grapes so that they give the best of themselves: a delicious juice for a unique wine. To get there, patience and length of time are virtues that nature imposes on us. This patience, which takes a lifetime, is the same as that which we have for our children: difficult to say, sometimes, who transforms who!
Influenced by the wind, often terrible here, burned by the August sun, sometimes tormented by extreme rainfall, but coddled by the mild spring and the harvest season, the grapes lead irreparably to a creation which is never neutral or soulless.
It is soaked with the One to whom everything tends and towards whom we raise the fruits of our labor.
"The Spirit revives us: let us be led by the Spirit!" This is why we put it in the spotlight, He who is Sagesse (Wisdom), Intelligence, Conseil (Advice), Force (Strength), Connaissance (Knowledge) , Adoration and Piété (Devotion): these are the names of the seven vintages, named after the experience that each plot teaches us.
I like to define myself as a farmer, growing, aspiring, learning. By putting all his soul in his hands, his land, his grapes, his wine is like no other. It takes part of the identity of the one who shaped it. He is unique in his image. And just waiting for one thing: to be found out...

La livinière is an old wine village wit h 600 inhabitants and is located in the well-known and beautiful wine region of Languedoc, including the cities of Montpellier, Carcassonne and Narbonne. Many of our fellow residents live from wine-growing. La Livinière has a grocer, a bakery, a doctor a pharmacy, a restaurant and of course several châteaux, where you can enjoy
and taste delicious and often awarded A.O.P. wines. Olonzac is a larger village a few minutes away, for your visit to restaurants, larger shops or pleasant terraces and the market on Tuesday morning is also worth a visit. The rural La Livinière is located at the foot of the Montagne Noir. An area with a lot of natural beauty, where you can walk, cycle, picnic for hours, or swim in the crystal clear streams and rivers that have made their way through imposing rock faces...

This pretty 10th century village, situated on the border of the Aude, is the economic capital of the Minervois. Olonzac, the heart of the Cathar country, of which Minerve remains the symbol, is a land of contrasts. Running along the Canal du Midi, it is home to the garrigue, rockery and vines from which the famous Minervois wine is extracted. All around you can discover caves, canyons, plateaus, natural bridges, dolmens and Romanesque churches. It is the proximity of the Canal du Midi that offers the most interest, especially the presence of the lock and the Ognon canal bridge. You also come from far away to enjoy the lake of Jouarres which, in summer, is the only lake in the area equipped for swimming and water sports. Built in the 18th century in the pretty village of La redorte, the Château de La Redorte invites its guests to relax within the elegant setting of a French château. A stone’s throw from the beautiful Canal du Midi and 30km from Carcassonne town, the property has been entirely renovated, both to restore its character and faded glamour, and to adapt it to long and short visits by guests. Located at the foot of the Montagne Noire, in the little village of La Livinière, the restaurant, which seats 60, was established in 2009 by Jonathan Plieu.
The service is attentive and considerate and the cuisine is creative with expertly balanced flavours. The dishes are prepared using a variety of local produce, including some organic products. In the summer you can sample seasonal local specialities accompanied by the best Minervois wines under the shade of the mulberry trees on the terrace.
The restaurant also has two dining rooms for group bookings and can cater banquets for up to 200 people in the village’s community hall. From May to August, entertainment is provided in the square with music and a wine bar...
