A.O.P. MinervoisThe Château de Gourgazaud, sheltered by the lower slopes of the Montagne Noire, was one of the pioneers in the development of top-quality wines from the Minervois. The Château is mentioned on maps from the 17th century. Its vineyard, covering an area of 100 hectares, shelters a wide range of grape varieties, producing red or white wines: Syrah, Mourvèdre, Cabernet Sauvignon, Viognier, Chardonnay and Sauvignon. For every grape grower, each passing season is a cause for speculation and concern through to harvest time. Will nature's elements, in the form of rain, frost, hail and sunshine, unleash their sometimes turbulent but more often beneficial forces in line with the seasonal calendar. In some ways, we might be likened to mariners whose sails are alternately filled with the great Le Cers wind blowing in from the west or the humidity- and rain-filled gusts of Le Marin. The rains in autumn and early winter help replenish the land's water reserves while the chilly months of December, January and February offer the vine some welcome respite from periods of frenetic growth...

A.O.P. Minervois The Wine estate Clos Centeilles is located in the very heart of the area “Minervois la Livinière”, 1st of the Languedoc’s “cru” to be recognized in 1999. Since 1995, Patricia Boyer-Domergue dedicated herself to reimplantation of old forgotten vines. "Much has been happening at the domain, and with summer well underway it’s time to reflect and appreciate the scents of the Mediterranean garrigue and swallowtail butterflies that flutter harmoniously amongst the lavender. The cigales started to sing a week ago, announcing the arrival of some very hot weather. Despite the lack of rain, (which I await with baited breath !) I’m very pleased with how the vines are coping. The branches of some of the Syrah are now 1,5m and it’s a marvel to see them dance majestically in the breeze. It certainly is a relief that we have so far managed to avoid the ferocious hail storms which have savaged other areas the country".

Siran

Siran is a beautiful old fortified town in the rolling vineyards of the Minervois, southern France. Siran is growing in popularity and now has a population of about 700 people. The village has a beautiful tree-lined square with a bar, church, seating areas, boules court, post office and library in the center. The old center of the village has been fortified and has lovely cobbled streets, fountains, arches, a bell tower, stone steps and some of the original fortified turrets. The old village is close to La livinière, said to be the wine village of the Minervois...

Situated 2km from Caunes, Notre Dame du Cros is a remarkable site with a chapel dedicated to the worship of the Virgin Mary. Following a miraculous cure by the spring water, three small dry stone chapels were built on a steep slope with three statues, the Virgin Mary, Saint Joseph and Saint John. This is the origin of the pilgrimage of the Cros. A larger chapel had to be built as the number of devotees grew. Pilgrimages and processions were regularly organised to coincide with the feasts of the Assumption and the Nativity and the relics of the Caunes martyrs were associated with processions asking for rain, for the protection of the harvest etc. Religious rituals were also observed during Easter week. A few pilgrimages and celebrations have survived to the present day, specifically on 15 August and 8 September. Inside the church, the chancel is lavishly decorated with paintings framed with marble and gilded wood and the beautiful communion table, pulpit and font are all made of marble...

L'Oulibou is a fascinating place to visit. Only 3.5 km from Mailhac, it produces some award winning oils and olives which can be sampled in the very mill where they have been made. You can also see the whole process that olives go through in order to make them into a wide variety of oils. The 'lucque' is one of the main olives of the Languedoc Roussillon area and it under goes some magical transformation within the walls of this traditional mill. 2 kilometres from Bize, just off the main road between Beziers and Carcassonne, you will find l’Oulibo, a cooperative that produces some of the best olives and olive oils in France. Bize is part of the Minervois region that includes the village of Minerve 10kms to the north which was the site of a famous siege by Simon de Montfort and the consequent martyrdom of the Cathars. Nearby are Beziers (35 minutes) and Narbonne (25 minutes) with cathedrals, excellent markets, shops, museums, and much more...

The Dolmen des Fades is surrounded by a forest of pines a little away from the road on a hill at a place called "Morrel de las Fadas", which means in Occitan "Slope of the Fairies." The monument is the biggest dolmen long hallway (previously covered walkway) in the south of France. It was built, according to the archaeologists ca. 3500 BC (late Neolithic) by the people of la culture the Véraza: the remains of this culture were first found in 1903 at this place after plowing of the terrain and then in 1946 after meticulous excavations by Odette and Jean Taffanel a necropolis of the "Champs d'Urnes" revealed. They found include a dagger with brass rivets, a very original piece in the Olonzac Museum where it is stored. From Pépieux direction Minerve (take D 206), and after 2 km, at the area of Mignarde, take the first left (D 168); The Dolmen is shown on the left at km. It stands on a hill planted with pine trees, where you have a beautiful view...

Homps - The Aude River and the Canal du Midi border the entire Minervois wine region. Homps is an attractive canal-side village, with good boating facilities, a range of good restaurants where local wines can be enjoyed and a 12th century Romanesque chapel. La Port Minervois is typically welcoming and enjoys an active local life. A great place to disembark and stretch your legs and a great base from which to explore the Minervois. You are at the foot of the Montagne Noir and Minerve (one of the prettiest villages in France) is an easy 15 minute drive. Lake Jouarres (Lac de Jouarres) is within walking distance, as well as the large village of Olonzac. Another attraction at the harbor is the building called le Chai de Homps. The Minervois is an established wine region, where the best winemakers come together to present their products, warmly welcome visitors to taste, enjoy and ask about the wines of Minervois and Minervois La Livinière. The wines of this sunny region are rich and generous. Le Chai de Homps is a great place to improve wine knowledge.
