Located at the heart of the Minervois appellation, Château de Pouzols covers 80 hectares. Vines are planted on facing clay and limestone terraces in an arid climate and sunshine for more than 300 days per year.

This property has been in the Baron de Fournas’ family since 1437. It has been handed down through twenty-one generations. The archives at the Château show that the Château’s main produce has always been wine and olives.

Close to the famous Canal du Midi, the village of Pouzols is a step Minervois South renowned for its wines. The hills overlooking offer visitors a wide variety of Mediterranean plants which delight many walkers. Besides a wonderful panorama of the coastal plain that stretches from Béziers to Narbonne, it is not uncommon to admire the sunrise over the snow-capped Pyrenees and more particularly on the Canigou.

Just 22 kms north of Narbonne, one finds Pouzols-Minervois, nestling in the Minervois hills, with the distant Espinouse behind. Its a quiet village which weaves it magic.

The word "Pouzol" comes from the occitan words "Posol" diminutive of Potz meaning small well. The roman road ' Via Tolosana" went just behind today's Pouzols, and became Cami Roumieu - one of the pilgrimage routes to Santiago de Compostella.

There were Roman villas built around, some perhaps for centurians. Later as a pilgrimage route, a number of hostels and inns were created to feed and give shelter to the pilgrims.

Minervois

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

There are thousands of grape varieties contributing to a vast array of different wine styles with each variety having its own distinct flavours and characteristics. Varieties can be made uniquely to make a wine, in whch case the wine is known as a varietal, or collectively with other varities, when the wine is known as a blend. The soils and ‘terroirs’ in the Aude area are very varied, from Schist, Sandstone, Marl, Gravel, Pebbles, Limestone, to Granit and Alluvial soil; thus making many marvelous and different styles of wine. Also in this massive area are many different grape varieties, the reds include Carignon, Cinsault, Granache Noir, Syrah, Mourvèdre, Cabernet Franc, and Merlot. The whites, Chardonnay, Granache blanc, Picpoul, Marsanne, Roussanne, Vermantino, Mauzac, Chenin and Clairette...
