A traditional 19th century wine estate, Chateau Canet is today recognised as one of the leading domaines of the Minervois region in the heart of the Languedoc Roussillon. The 45 hectares of vineyards are complimented with 3 hectares of olive groves and over 65 hectares of farmland and pine forests. The setting is truly enchanting with all the buildings nestled in the heart of the estate. There are uninterrupted views over the vineyards and olive groves to the distant Alaric mountains. It is a perfect place to unwind and soak in the beauty of the South of France.

We offer the opportunity for you to see behind the scenes for an in depth view of the work of a ‘vigneron’. You can visit the cellar, discover the vineyards, taste wines directly from the barrel and develop a better understanding how we make them. We have designed 3 different visit to accommodate different schedules and interest levels: Discover Château Canet Your visit will take you through the wine making process from where the grapes come into the cellar to seeing where we mature the wine in oak barrels. Along the way learn how we use the original 19th century vats alongside modern technology and blend the science with the art of wine making. This visit includes a commentated tasting of 3 wines followed by a tasting of our olive oil our tapenade and the unique ‘Lucques’ olives only grown in our region. The visit last approximately 45minutes and costs 10€ pp (minimum of 4 people)

The 50 hectares of vineyards of Château Canet are located in the middle of a natural heaven, the Balcons de L’Aude in the Minervois region. A great wine “terroir” made up of clay and limestone soil. We manage the vineyards according to the guidelines of sustainable viticulture, following the brief of ‘Terra Vitis’® The mandate helps us grow great grapes while respecting the environment and maintaining the long term health and sustainability of our vineyards and surrounding agricultural land. The vines also benefit from a warm Mediterranean climate and the interesting climatic conditions caused by the winds; the cool northerly Atlantic wind called the Cers and the warm Vent Marin which blows in from the coast. The principal grape, covering over half of the vineyards, is Syrah (Shiraz). The more mineral soils are planted with Chardonnay, the remaining vineyards are planted with Grenache, Merlot, and the regional varietals Roussanne and Bourboulenc which form the basis of Chateau Canet’s white Minervois. 80% of the domaine is recognised as “Minervois”, one of the Appellation d’Origine Protégée (A.O.P.) of the Langudeoc Roussillon. The remaining vineyards are classified as Pays d’Oc I.G.P. (Indication Géographique Protégée).

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

There are thousands of grape varieties contributing to a vast array of different wine styles with each variety having its own distinct flavours and characteristics. Varieties can be made uniquely to make a wine, in whch case the wine is known as a varietal, or collectively with other varities, when the wine is known as a blend. The soils and ‘terroirs’ in the Aude area are very varied, from Schist, Sandstone, Marl, Gravel, Pebbles, Limestone, to Granit and Alluvial soil; thus making many marvelous and different styles of wine. Also in this massive area are many different grape varieties, the reds include Carignon, Cinsault, Granache Noir, Syrah, Mourvèdre, Cabernet Franc, and Merlot. The whites, Chardonnay, Granache blanc, Picpoul, Marsanne, Roussanne, Vermantino, Mauzac, Chenin and Clairette...

The Lac de la Cavayère (Cavayere lake) is a large man-made lake not far from Carcassonne Chateau that was built in 1988. It is surrounded by the beautiful Mediterranean landscape and is spread over 40 hectares. A footpath goes all the way round the lake, which is a leisurely hour and a half's stroll. There are also two beaches (a sandy one and a pebble beach), which are suitable for swimming and have life guards present during the summer, a play area for children with bungee cords attached over trampolines, to give you extra bounce and o2 - an adventure park created by hanging ropes between trees where you can climb, slide and swing, including a long 'slide' over part of the lake itself.

The chef does a wonderful job of using fresh, local ingredients to show off the cuisine of this area of France....

On our terrace you can enjoy life on the water, with a delicious menu that we change every week! We strive to satisfy you as much as possible. "Extensive menu, good kitchen, and very friendly service. What caused some confusion is that the terrace of this shop is in front of the adjacent fish restaurant, and vice versa. Both restaurants looked promising but we opted for this case as the menu also included meat dishes, such as, for example, magret de canard. We did not regret it. Everything was delicious. Both, tasty magret and dorade, everything was delicious!"...
