At the heart of Languedoc viticulture, Cellier Lauran Cabaret is one of the main producers of the Minervois appellation. Our winegrowers have joined forces to develop a cellar that is the most advanced in terms of equipment: this technical nature ensures constantly improving results. Selection at all levels is an essential element in the search for quality.
Our production area covers rugged clay-limestone and slate slopes and allows low yields. Our wines have a very typical qualitative and aromatic profile. At the qualitative level, several criteria have been defined:
- The quest for the best grape terroir match.
- The selection of plots with low yields or old vines.
- Control of cultivation techniques and state-of-the-art equipment in winemaking ensure that the quality level can be optimized.
Tradition and respect for it are the promise of authentic wines that are representative of our country and our efforts. |

The history of the vine in our region goes back two millennia with the Roman presence. It can be found in all stages of local history, with varying degrees of importance. As they passed, the Romans left their mark along with the vine.
Later, Seigneur Cabaret de Lauran defended our region during the Albigensian Crusade. Capitelles, Roman tombs and medieval towers attest to the richness of our historical heritage. Viticulture remains the most important activity in our region.
This cellar was built in 1929 and it produces wine from 180 owners. The total annual wine production of Cellier Laurent Cabaret is around 65,000 hectoliters. The Minervois benefits from the Mediterranean climate, where the ideal grape varieties Syrah, Carignan and Grenache for this region can ripen perfectly. Very good results are also achieved with the Merlot and Cabernet-Sauvignon and we find the native Caladoc and Chasan there. In addition, Cellier Laurent Cabaret selects the type of soil, so that very nice wines can be made. Cellier Laurent Cabaret puts extra time and effort into the selection process of the different grape varieties in order to achieve the best wine quality. There are quite a few differences between the grape and soil types (especially a slate soil). In addition, the grapes are all picked by hand!

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France... |

Fortified village, the village of Laure was surrounded by ramparts and a moat. Two towers attest to the ancient fortified wall (Tour Bousquet - nine Portal Tour).
The Gothic Church of St. John the Baptist, was rebuilt several times. Some remains: the Church of Buadelle and Romanesque bell tower of Saint Jacques d'Albas.
The Mézolieux round: this monument of Gallo-Roman origin is surrounded by vineyards on the old Roman road (Che-min Romieux). Grave of Saint Eugene: this dolmen located in the wood Russol is a vast burial ground dating from the mid Neolithic.

Linda Wearn, Emilie's chef, originally from the United Kingdom where she was trained, gained international experience, traveling and working in Europe and the United States, before coming to settle in the South of France.
Resident in Caunes Minervois where she chose to open her restaurant, she transmits her passion for quality and her experience of international cuisine by creating unique menus for her restaurant, whose name derives from that of her daughter. Auberge de Clamoux, a small inn that serves a fine three-course weekday menu at 13€. Go ahead and try the salad with gesiers (duck gizzards, a regional favorite) or sample the offering of charcouterie (hams, sausages, etc). The main course is generally meat, duck or salmon, and the desserts are impressive. One lunch time here, the main dining room had been converted to a huge table seating several dozen French men and women in their 70s and 80s, plowing through huge platters of food and liters and liters of wine.
