You will cross the ruisseau de la Coume by wading, to go up the path that follows the gorges; there you will see the old mill "d’en Julo". Some sheepfolds or "cortals" in ruins, a magnificent centuries-old oak-green and finally, "Rocs Negres" and great views of the Pyrenees. Further, overlooking the Cathar castle Aguilar, the signal tower "Del Far" and on the falaises de la Caune de l’Arago, where the "Tautavel Man" was found. Take the Grand Rue, at the end take right rue de la Tonnellerie, then left the rue du Pont Romain. You walk along the cemetery (where stands the chapel of Our Lady of Health) to direct you to a road which leaves the village. You go up the river of Coume on its left bank, before crossing a ford take the right path following the gorges where you will see the old mill on the river (Moli to Julo). Downstream Padern, the cash is Verdouble again to cross a link of limestone from the mountain of Tauch, thus creating a site with magnificent gorges. Clinging to a rock, the castle ruins above the village. This castle is monitoring the Verdouble valleys and Torgan. In 899, King Charles the Simple Padern gives to the Abbey of Lagrasse. The medieval castle, there is nothing left. Yet Padern housed Occitan knights in rebellion to the King of France. Thus, Chabert and William Barbaira Peyrepertuse found refuge when they fled. The building was an element of protection and surveillance over the mesh in this terrotoire border. The current building is a building of the seventeenth century made by the lord Peter de Vic making the acquisition at this time. Access is easy by a small path that winds to the south...

Aguilar Castle stands on a rocky hillock at the foot of the prestigious Haut Fitou vineyard.
In 1210 it was invaded and occupied by Simon de Montfort, whose soldiers took and held the owner Raymond de Termes in prison in Carcassonne. Militarily, the castle lay dormant for the next 30 years, until Raymond's son Olivier de Termes took back the castle in the brief revolt against the young viscount Trencavel against the crusaders. Aguilar became the refuge of faidits, Cathar knights and lords dispossessed of their own strongholds.
Since 1949, it has been listed as a monument historique by the French Ministry of Culture.
Today it is in poor condition, and can be sited by the public. The design of the castle reflects evolving military thinking of the late Middle Ages. It consists of an inner keep built in the 12th century, surrounded by an outer pentagonal fortification from the 13th century. It is oriented so that its point guards the side most vulnerable to attackers. The keep and the inner hexagonal fortification is flanked at each corner by semi-circular guard towers, each with archery outlooks...

Rivesaltes is the birthplace of the vin doux naturel, a creation of Arnaud de Villeneuve, the eminent 13th Century physician. It was he who discovered the process of halting the alcoholic fermentation by the addition of spirit to the must, thus giving rise to a new breed of wine. The technique has since been employed in the production of Rivesaltes, and over the ensuing centuries there have been numerous literary references to these fortified wines, which seem to have been highly regarded. Today there are 94 communes eligible to produce these wines, mostly in the Pyrénées-Orientales, although with nine situated in the Aude. The wines start off as principally red or white - although blending of red and white varieties, and subsequent barrel ageing, may influence the wine's true colour and eventual style significantly. Grenache Noir is the lead variety for the red wines, but this may be blended with a number of white varieties, including Grenache Blanc and Gris, Maccabeu and Tourbat...

Tuchan lies in a plain and bordered to the west by Mont Tauch which at 900 meters dominates the town. It has always been productive but whereas you might at one time have seen flocks of sheep or goats wandering around and cereals being cultivated you can now only see varieties of vines like syrah, carignan, grenache, muscat all growing in orderly rows. The town lives off the grape and its current relative prosperity is due to the success of Fitou wine and the successful marketing by the Mont Tauch Co-operative. Tuchan has the atmosphere of a border town with Mont Tauch rising bleakly to the west and the Tramantane wind blowing strongly through the narrow streets. The old border between France and Aragon, and Spain, guarded by the Châteaux of Queribus and Peyrepertuse is only a few kilometres away. The town and its surrounding area has been lived in and fought over for a very long time. In the nearby village of Tauteval, a skeleton of 400,000 years old was found. At Château Nouvelles, 2 kilometres, to the north (where very good Fitou wine can be bought) an old roman road, the via Mercadaria, passes close by. The Romans were here mining the iron, gold, silver and lead. Narbonne, a major Roman port on the Mediterranean coast, now the sous-prefecture for the Aude, is 45 kilometres away...
