Located in the heart of the Montagne Noir, at the junction of three departments (Haute-Garonne, Tarn and Aude), the basin of St. Ferreol is for generations, one of the favorite rendezvous of Recreational enthusiasts and outdoor. Its beach, its supervised swimming, water sports, fishing preserve its and its picnic areas are forgetting that Lake St. Ferreol is primarily a retention pond, the centerpiece of the supply network of channel noon! Castres is built on the River Agout, and the old houses on either side lean their upper stories out over the water as though reaching out to the opposite bank. These were once the homes of the weavers and the dyers, and this connection with the textile industry is still important to Castres today. Castres is full of history, and there are reminders of its past very much in evidence in the modern city. The city was founded around a Benedictine Abbey, but also existed in Roman times as Castroum. Monuments worth seeing are the Church of Saint Benoit, the fountain and the statue in the Place Jean Jaurès, the town hall which lies in the old Bishop’s palace, and the Quay of the Jacobains, viewed from the Pont Neuf. Also, don’t miss the opportunity to visit the Goya Museum, which houses the largest collection of Spanish art in France. Castres is an excellent place to be if you are one of the many people who love the buzz and colour of French markets. The town has two daily markets, with fresh produce on offer in the main square, and a bric-a-brac or flea market in the Place Albanique. On Saturdays the general market stretches down the riverside, making a most picturesque place to shop!...

It was created in 1996 by Yves Blaquiere, erudite man, passionate about history and glass. The association "Les Amis de Sorèze", which was created in 1998, manages the museum with the support of the mayor and organizes exhibitions and conferences. The museum currently contains over 1600 pieces of glass - from antiquity to the mid-twentieth century - gained through a reasoned policy of purchase and the generosity of many donors. Castelnaudary is probably most famous for a 'peasant' dish of beans and various meats known as Cassoulet. It can take two days or more to prepare and is great comfort food for a chilly winter evening. The traditional cooking vessel is an earthenware pot from Issel called a cassole for which the dish is named. The ingredients include haricot beans grown in Pamiers or Lavelanet, duck confit, garlic sausage, pork, Toulouse sausage and mutton - but not necessarily all at the same time but a combination of several of them. If it's done absolutely to tradition, apparently is must be cooked in a baker's oven fired with rushes from the Montange Noire. In town you will find some fine old mansions, a restored windmill and an 18th Century semaphore tower. It is a real pleasure to spend a couple of hours in Castelnaudary having coffee or shopping for a picnic in the market. Today it serves as an important commercial centre for the rolling Lauragais farming country hereabouts, as it once was for the traffic on the Canal du Midi in the 17th century when agricultural and manufactured produce became easier to export to which it owed a period of prosperity. The Grand Bassin in the town at 7 hectares is the largest open area of water in the canal, and is today its major pleasure port. In fact, the most flattering view of the town is still that from the canal's Grand Bassin, which makes it look remarkably like a Greek island town, with its ancient houses climbing the hillside from the water's edge...
