Château de Gaure
Château de Gaure - Rouffiac-d'Aude
A.O.P. Limoux Son of a wine grower in the Garde and former director of Crowncork, a leading Belgian corporation, Pierre Fabre sold his company in 2001. He decided to realize his dream and make quality wine in the Languedoc - his father made bulk wine. In 2004, he found and purchased the Chateau de Gaure, an estate near Carcassonne with 200 ha of land and the castle in the middle. The property dates back to prehistoric times and was once the site of an ancient Oppidum -a large defended Iron Age settlement. Numerous relics have been found scattered throughout the property. In addition to being an accomplished winemaker, Pierre is also a talented artist. His paintings adorn the walls of the cellar and each vintage, he creates new art for his labels. Not only is the wine itself a work of art, the bottle is also truly a distinct representation of Pierre and his artistic vision. Pierre once said, “painting has always been a way to escape to a better world”. Farming practices/vinification: Organic. The parcels used for the white are certified organic since 2007. The parcels used for the reds are either certified organic or in conversion. In the cellar, only indigenous yeasts are used. Very little sulfite is added: 1gr per hectoliter at pressing, before the fermentation, to avoid bacteria then 1 gr at bottling. Total: 20 to 25 mg sulfite per hectoliter. The wines are not fined and vegan friendly...

Château Rives-Blanques - Cépie
Blanquette de Limoux, Crémant de Limoux, Blanquette Méthode Ancestrale  Chateau Rives-Blanques is a 22 ha family-run estate near Limoux, surrounded by woodland in the foothills of the Pyrenees. Seriously committed to environmentally sustainable wine growing, we make our wines and manage our lands with ecological integrity, full of respect for nature and for this unique terroir that is our home. Wild flowers, clover or cereals grow between the vines; vine cuttings and composted grape pips and skins are ploughed back into the soil, and we never use hard chemicals or fertilizers. Aided and abetted by the use of harmless pheromones to replace insecticide sprays, we rely on a happy combination of altitude and prevailing brisk, dry winds to keep unwanted pests at bay, in the most natural way possible. Enthusiastic particpants of the European environmental programme BioDiVine, we continue researching the relationship between viticulture and biodiversity, and have been close working partners 0f the Chamber of Agriculture for decades...

La Perle du Domaine Michaud

La Perle du Domaine Michaud - Roullens

Synonymous with elegance and class, 'La Perle' also refers to the famous painting "The girl with the pearl" by the old Dutch master Vermeer. This, with a nod to the Dutch origins of the young talented chef and his family. In "La Perle du Domaine Michaud" you will be presented a menu mainly inspired by the French cuisine, with a subtile Dutch touch, while the chef keeps in mind the respect for the environment and responsibility towards our planet. Our restaurant finds itself in the Languedoc-Roussillon, one of the oldest wine regions of France. While vineyards of the Corbières, Minervois, Cabardès and Malepère meet at the city of Carcassonne, the first sparkling wine of the world, Blanquette de Limoux, saw the light a little more southwards. In our restaurant we want to make you acquainted with fabulous wines from the area. That is why the surprising but relatively unknown wines from the Malepère, the ‘Benjamin’ of the Languedoc, occupy a prominent place on our wine list...
