Champ des Soeurs
Château Champ des Soeurs - Fitou
A.O.P. Fitou A.O.P. Corbières  Laurent Maynadier set up Ch Champs des Soeurs in 1999, the fifteenth generation in a long line of vignerons that have been producing wine in Fitou since the 17th century. He and his wife, Marie Valette, run the 12 hectare estate together. They adhere to the principles of Terra Vitis which are guidelines set up to help growers protect biodiversity and traceability of their fruit. On south facing, rocky hillsides perdominantly made up of limestone and schist, Laurent plants his vines at particular angles to avoid soil erosion and plants indigenous trees around the vineyards to protect the soil and natural ecological boundaries. He practices minimal intervention. Based in the heart of Fitou which was granted the first AOC in the Langeudoc in 1948. The wine exudes wonderfully warm, ripe black forest fruit, with just a hint of rustic typicity. Enjoy now and for a number of years to come. When aiming for a proper balance of flavours, most French winemakers find that non- intervention is not an option when working with Carignan. Laurent Maynadier of Château Champ des Soeurs will do all his alcoholic fermentation in stainless steel tanks, which can be the quickest way to end up with a reductive Carignan (that tell-tale smell of struck match) due to the juice not being able to breathe, but he says that it’s easy to deal with: ‘You just manage pump-overs as needed by moving the reductive part of the batch to mix with the oxidative at the top’...

Les Enfants Sauvages
Domaine Les Enfants Sauvages - Fitou
A.O.P. Fitou A.O.P. Rivesaltes, Muscat de Rivesaltes  Human existance depends on respect for nature. A simple truth, but one so oftenoverlooked in today´s busy world. For agriculture, this truth means that we must farm our land without damaging it; we must create an equilibrium between what we take from the land and what we give to it; we must understand and resprct the rules of the earth and the cosmos. For wine growers, what we give to the land must be this: first of all we must break with the habit of monoculture and ensure that our soil is teaming with life; we must keep ourgrowing areas on a human scale; maintain or create a rich tapestry of plants so that a variety of flora will encourage an equally varied fauna, enrich the soil in a responsible way, caring for its micro- and macro-organism; in short: do all we can to ensure that vines, as a product of the soil, are anintegral part of the natural biological cycle. This will allow our vines to develop the highest level of natural resistance without using any chemical products. Avoiding chemicals means doing much more manual work: hoeing, pruning and treating each vine with our natrual infusions of nettle, camomile, and other herbs. For the greatest concentration of aromas and to preserve the unique character of our terroir, each vine needs individual attention: removing some leaves, side-shoots and excess groth and, with some grapes such as Mourvèdre, even reduce the number of grapes. There is nothing new about cultivating vines in this way. We are simply returning to long-standing traditions, some of which have almost been fogotten because chemical pesticides, mechanisation and convenience led winegrowers to neglegt them. Although the importance of these traditions has always been understood in vineyards where quality comes first. We continue with this "new-old" approach in our cellar...

Train touristique du pays Cathare et du Fenouillèdes

Train touristique du pays Cathare et du Fenouillèdes - Axat - Rivesaltes

The Cathar Fenouilledes country train runs along a railway between Rivesaltes in the Pyrenees Orientales ans Axat in Aude, dignified heritage from the City of the South and a radial relationship between Carcassonne and Rivesaltes. Along the way you can see numerous and remarkable works of art as it winds its way through valleys and tunnels: Flirting languidly with the rivers Agly and Aude, it reveals the rocky countryside, sprinkled with vineyards on the mountainside, dominated by many notables sites (The Catlar Castle at Queribus, The Tour of Far, the relay station of froça real...) before reaching the forest at the end of an audacious railway journey...

Aqualand - Leucate

Aqualand - Leucate

Amusement park: water chutes, children's games, etc... Aqualand - Leucate, which is full of slides of all kinds, welcomes all the family for a day devoted to water activities and fun. To make it easier to access the various attractions, the park has split the activities into three colour-coded categoriessimilar to the system used on ski slopes. Therefore, the green attractions are open to all visitors, and include activities like thalassatherapy in a space designed almost identically to Greek baths (the 'Bubble Bath'), and a relatively calm river descent in giant rubber rings. The red activities, on the other hand, will really get the adrenaline pumping, with faster and more unpredictable descents promising exciting new sensations...

Musée de Préhistoire de Tautavel

Musée de Préhistoire de Tautavel

The site of Tautavel Cave (also called Caune de l'Arago) is an ancient karst cave in the Tautavel valley of France with over 35 feet of deposits containing over 40 very old stratified occupations, dated between 450,000 and 100,000 years before the present. Stone tools and faunal remains have been found in abundance. The oldest layers include several bone and bone fragments of several individuals of the so-called Tautavel Man, called Homo erectus tautavelensis. Archaeologist Henry de Lumley of the Institut de Paléontologie Humaine has been excavating the cave since 1964 and continues research today....

de Salses

Forteresse de Salses - Salses-le-Château

This fortress was built between 1497 and 1504 on the order of Ferdinand the Catholic, King of Aragon, to keep France out of the Roussillon region. It was intended to replace the square castle with 27 metre sides located on a nearby peak. This small fortification was ill adapted to the art of warfare as it had developed at the end of the 15th century when metal ball artillery came into use. Designed by Francisco Ramiro Lopez, the king’s first artilleryman, the fortress of Salses is a masterpiece of military architecture, a notable example of the transition from medieval château (the fortress has a keep and round towers framing long curtains) to modern fortress (it is strictly geometrical with deep foundations). The property of the French State since 1930, the fortress of Salses is managed by the Centre des monuments nationaux, which opens the monument to the public. Some 100,000 people visit the fortress every year...
