Christophe, with his 20 years of experience in a Minervois restaurant, offers you traditional dishes made from fresh products depending on the seasons.

Minervois

A.O.P. Minervois

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

A.O.P. Minervois Château de Fauzan vineyard is located in the Minervois on a clay limestone plateau, 350 meters above sea level. It was the passion for trout fishing in the river Cesse, which led Albert, the grandfather of the Bourrel family, to Fauzan in 1956. Located in the region of La Livinière, near the Gorges de la Cesse, between the characteristic departments of Aude and Hérault, Château de Fauzan creates exceptional wines with passion and authenticity. Over the years, the Bourrel family has been working to increase the potential of this exceptional country, a legacy of the time when poetry is bottled. The Syrah, Grenache and Carignan grapes have been planted. These vineyards, roughly 50 hectares, are exploited by Jean Philippe Bourrel, who took over the family domain in 2001 and wants to offer new quality wines to the consumer. It was only after his high school studies that Jean Philippe decided to further expand the domains that his grandfather had purchased in 1956. The vineyards are right next to the village of Minerve at a reasonable height so that special techniques can be applied...

The Curiosité de Lauriole is not a place where you can find something to buy or other interesting things, no it's really an insignificant piece of road with only an optical illusion. When we were there for the first time we looked everywhere for something special but did not find anything. After a little search on google we found an interpretation of this phenomenon. What you have to do to find the cache is just to find out the secret of the Curiosité de Lauriole. You can put your car at one of this coordinates and just set your gear in the free and leave the breaks... because of the optical illusion you will think the car goes that direction but it's not!!!

A naturist site hidden in the hills of the Minervois, only 3 km. from the medieval town of Minerve. There are marvellous views to the Pyrénées, the Corbières and the coast at Narbonne. Jeanne continues to run the site (following the sad death of Gilles) and offers a warm welcome, and promoting an enjoyable family atmosphere....

Using dioramas (original figurines presented in various scenes), the museum tells the story of the tragic saga of the Occitan Cathars. In the 13th century, the catholic princes, spurred on by Pope Innocent III, decided to put an end to Cathar influence in the provinces of Languedoc, Simon de Montfort came to impose the law and the catholic faith in Languedoc by force and fire. The local barons and knights then took up arms to defend their land, their faith and their culture. Following many years of combat, they lost their independence and were forced, in humiliation, to witness the martyrdom of the Cathars under their protection, who were burnt at the stake on enormous pyres...

During the months of July and August, Le Maquis is a holiday unique and joyful, often very lively at night, where there is a very friendly atmosphere. You can come alone (e), with friends or family, and be almost certain to leave pockets full address and cool memories. The camping area is spread over two hectares, dotted with trees and shrubs, all sites are shaded. It was concluded to be safe from the curiosity of the herd. Adjoining the site, the area houses the restaurant Feast farmer, wooden tables, a tent, a small stage, a bibliography barter a tree to listen to a selection of sound Maquis emissions. There is also a fleet of bicycles, playground sports (volleyball, badminton, table tennis, etc.), a toy library, petanque, places of business (tent, Berber tent room, restaurant). Everything is in free access, under the responsibility of the campers for animation, storage and maintenance. One way to experience the self in holidays .. Warning period from late July to mid-August is required, we invite you to come see us outside this period if you want to be more quiet...

La livinière

La livinière is an old wine village with 600 inhabitants and is located in the well-known and beautiful wine region of Languedoc, including the cities of Montpellier, Carcassonne and Narbonne. Many of our fellow residents live from wine-growing. La Livinière has a grocer, a bakery, a doctor a pharmacy, a restaurant and of course several châteaux, where you can enjoy and taste delicious and often awarded A.O.P. wines. Olonzac is a larger village a few minutes away, for your visit to restaurants, larger shops or pleasant terraces and the market on Tuesday morning is also worth a visit. The rural La Livinière is located at the foot of the Montagne Noir. An area with a lot of natural beauty, where you can walk, cycle, picnic for hours, or swim in the crystal clear streams and rivers that have made their way through imposing rock faces...

The Dolmen des Fades is surrounded by a forest of pines a little away from the road on a hill at a place called "Morrel de las Fadas", which means in Occitan "Slope of the Fairies." The monument is the biggest dolmen long hallway (previously covered walkway) in the south of France. It was built, according to the archaeologists ca. 3500 BC (late Neolithic) by the people of la culture the Véraza: the remains of this culture were first found in 1903 at this place after plowing of the terrain and then in 1946 after meticulous excavations by Odette and Jean Taffanel a necropolis of the "Champs d'Urnes" revealed. They found include a dagger with brass rivets, a very original piece in the Olonzac Museum where it is stored. From Pépieux direction Minerve (take D 206), and after 2 km, at the area of Mignarde, take the first left (D 168); The Dolmen is shown on the left at km. It stands on a hill planted with pine trees, where you have a beautiful view...
