Located in the Cabarde Region, on the lower slopes of the Montagne Noire, in an area steeped in the history of the Cathares, this restaurant features a wood-burning oven and massive amounts of well prepared food.

The apertif tray, which may be ordered as the first course, has to be seen to be believed.

Roquefère, this small mountain village sits at the foot of a 12th century chateau at an altitude of 322 metres above sea level in the Montagne Noire.

There is a jazz festival here in August.

"We've celebrated our birthdays and wedding anniversaries and lots of occasions in between at Sire de Cabaret for more than ten years and the quality has never changed, if anything it's become better. The restaurant itself has a light airy atmosphere with one complete wall of glass doors, which in summer opens onto a balcony. In winter there a huge roaring open fire where you can see your steak being cooked. In summer this is replaced by a barbecue in the tree shaded courtyard. Roquefere is an attractive small village and many walks start and end there so you can precede your dinner or lunch with a rugged scenic randonnee".

Not far from the village is the Cascade de Cupserviés - the highest waterfall in Europe!!

Minervois

A.O.C. Minervois

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...


Cabardès

The Cabardès region is situated to the west of Languedoc and to the south of the central massif, a geologist's dream, balanced between east and west, the sun and the coolness, the heathland and the mountain. It is here that the winds cross. They bring the intense mediterranean heat necessary for southern "cépages" (grape types) such as syrah and grenache, and the cool atlantic humidity for the ocean "cépages": merlot, cabernet-sauvignon, cabernet-franc, cot and fer-servadou, to prosper. The vineyards and wines of Cabardès have been recognized as AOC since february 1999. The quality of the grapes, the wine-making, the blending of the "cépages" and the keeping of the wines has allowed us to obtain the best balance between fruit and structure, fullness and complexity, intensity and elegance. Cabardès assembles 30 châteaux and domaines over 500 productive hectares spread amongst 18 villages. 20000 hectolitres are produced each year,of which 60% are exported....

Why an exhibition of Occitan Catharism in Mazamet? Catharism, dissident religion of the Christian faith, considered to be a heresy by the all-powerful Catholic Church, was condemned, and its adepts were persecuted. The Cathars were obliged to flee into remote areas and found refuge in the Montagne Noire : at the edge of the Aude Cathar Country. The Tarn side of this mountainous massif constituted a place of refuge and resistance for this religion. Hautpoul, the historic birthplace of Mazamet, ancient castrum (fortified village) perched on a rocky outcrop, served as a retreat during the period of the Inquisition. It was also one of the places of residence of the Cathar Archbishop of the diocese of Albi in the 13th century. This Medieval village is one of the rare vestiges of the Cathar time to be situated on the Tarn side of the Montagne Noire...

Built on the top of bedrock at 300m above sea level, the four towers of the site of Lastours (Cabaret, Tour Régine, and Surdespine Quertinheux) proudly dominate the course of Orbiel (the river of olive trees) and the torrent Grésilhou in a wild landscape bristling with cypress. Lock Cabardès since the early Middle Ages, they controlled one of the main pathways in the Cabardès and the Black Mountain and took all their importance at the time of the crusade against the Albigensians. Archaeological excavations carried out since 1980 under the direction of Marie-Elise Gardel, have helped to uncover the medieval village of Cabaret, the Mecca of Catharism and the resistance against the Crusader armies. This ancient fortified settlement called " Castrum ", consisted of a hundred houses and many forges. These places were abandoned abruptly without the inhabitants were able to take any object...

It is crossed by 2 rivers "Le Thoré" & "l’Issalès" and features numerous trees...

Fancy a bit of freshness? We invite you to discover the cave Limousis, 20 kilometers northeast of Carcassonne and penetrate into the bowels of the earth. Discovered in 1811, the cave, carved by a river has been electrified and fitted in 1935. However, it was modernized in 1973 to its current appearance. The eighth and final room contains a unique mineral formation, a chandelier of aragonite to 4 meters high and 10 meters in circumference, a real treasure....
