If you love excellent food and wine, then there can be no finer restaurant in the South of France as Auberge du Vieux Puits. This 3 star Michelin restaurant is run by the celebrated French chef, Gilles Goujon. I can not recommend this restaurant highly enough. The food, the service, the wine, the cheese . . . all were excellent.

Nobody has given Gilles Goujon anything for free. On the contrary. In a bucolic atmosphere far from the mundane noise, in an austere building –sold by the tiny Town Hall– he has been progressively restoring for a decade, he has been able to captivate plenty of customers and reach the top of the French guides: 5 hats in Gault Millau and 3 stars in Michelin.

Fontjoncouse is a tiny village nestling in the folds of the Corbières hills, and is home to an inn where food-lovers from the entire world meet to share a moment of culinary delight. Gilles Goujon renovated this house stone by stone with his wife Marie-Christine, while dedicating himself body and soul to cooking. The inn, which has been a resounding success, has lost nothing of its simplicity and charm. People come here to experience the amazing talent of a chef who gets his inspiration from all sides of the Mediterranean, offering everything from bouillabaisse to chakchouka. When a dash of virtuosity is added, the result can be most surprising: a chicken's egg from which bursts a mysterious truffle butter yolk on mushroom purée and winter truffles.

Our history is above all the story of a transmission, transmission of the love of a region, a vineyard, the passion of the work on the vines, the wine, the cellar and a knowledge-make. We are concerned by the preservation and development of the agro-landscape and environmental aspects set up on the vineyard before us (planting hedges and trees, maintenance of paths and streams ...). In the center of the village of Villerouge, in the Langedouc region of France, is the ancient castle of Termenes. The Villerouge-Termenes castle is known as the home of the last known Cathar Prefect Guilhem Belibasate, who was burned at the stake during the Catholic crusades of the 13th century. The Albigensian Crusades, as they are known, were ordered by Pope Innocent III. During those crusades, thousands of Cathars were burned at the stake. In the city of Beziers alone, thousands were killed. History records the infamous words of Arnaud Amaury, when asked whether to kill both Catholics and Cathars, responded: "Kill them all; God will recognize his own". He later reported to Pope Innocent III that "neither age, nor sex, nor status had been spared, and nearly twenty thousand people perished." This should be a lesson to everyone regarding the dangers of religious fanaticism...

Lézignan-Corbières is a very active town, located along the main road between Narbonne and Carcassonne. The town has plenty of shops and cafés and so makes a good place to stop for a lunchtime visit. The main attraction, though, is the Wednesday market which is very large and packs the town with market stalls, people, odors (of the good sort) and activity. Lézignan-Corbières isn't a particularly attractive town, and we found the narrow streets of the "old town" rather dreary. The main church of Lézignan-Corbières, Eglise Saint-Félix, is an imposing structure. Declared an historical monument, it's located in the center of town and has a small park just beside. Market Wednesday The Wednesday market is a really big affair in Lézignan-Corbières. The market stretches around the south side of the old town, packing the main Cours de la République and most of the adjacent side-streets. There are very many clothes and food stalls, and all are popular. It was fun to observe which vendors had the best reputation by the bigger crowds packed around the more popular vegetable and food stands...

With fine weather, many Portel hikers arrives, walkers and tourists. Their first visit is the old ruined church, La Chapelle Notre Dame des Oubiels. And the questions are always the same: when was this church built? What is the origin of its name? Why they have built so far from the village? By whom has it been destroyed? We will try to respond succinctly. The ruins of this old church, Notre Dame des Oubiels (lambs), are located a kilometer west of the village, built near the défilé de la Reïnadouïre (la Reine des eaux), crossed by the river Berre...
