Much more than a restaurant, with its concept close to the lovacore movement, this place which is housed in the former wine cooperative of Trausse, offers a cuisine made from local products. From the garden to the table, there is only one step: here, the vegetables are grown behind the building, the poultry and the eggs are from the hen house and the organic wines made by Jean-Luc Fabrié, winemaker. Besides, it is from Jean-Luc that the idea of the concept came: stop cheating with products, working with proximity sources and maintain honest prices. Successful bet. The menu is attractive and brillantly blends fish, meat and a range of organic wines of cellar price. On the menu, specialties of the region like the cargolade and its aïoli, the mushroom omelette, the meats grilled over a wood fire, and the seasonal dishes that sweetly smell the terroir of here. On fine days, you will enjoy taking your meal on terrace or under the pergola. The concert evenings in summer, the atmosphere is often very hot!

Trausse is completely surrounded by vineyards & has in fact 4 vignerons in the village & is within 10-15 minutes of dozens of wineries where one can also have a “degustation” (tasting). Trausse is situated in a relatively flat valley and for those people who like biking the whole area is extremely suitable. Within 15 minutes by car or 60 minutes or so by bike are the foothills of the Montagnes Noires (Black Mountains), where the vineyards still grasp onto the rocky soil and yet the scenery as you ascend is magnificent.

Tour Trencavel
Domaine Tour Trencavel - Trausse-Minervois
A.O.P. MinervoisHere, in the heart of the Minervois, the strength of the terroir grows to humility. It is on these arid lands that Jean-Luc Fabrié, passionate winegrower, runs his estate. His philosophy could be summarized in a few words: "To be a vine grower is to be careful, curious. "To be a vine-grower is to be inventive in tradition, bold with reflection, obstinate with fantasy For the vine-grower, the vine is a battle between matter, elements, biology and the hand of man. This matter, It is the earth, the elements are air, sun, wind, biology, it is the vine, the wine". The estate is cultivated on 40 hectares, in parcels where are distributed Syrah, Grenache, Mourvèdre, Cinsault, Roussane, Chardonnay, old Carignan. Very close to nature, he leads his field in organic farming, expressing at best all the typicality of the vintage. Meticulous and regular checks enable the prevention of diseases. All the maintenance work on the plots is done by hand: short cut to one eye, disbudding, green harvesting, leaf stripping...

Luc Lapeyre
Domaine Luc Lapeyre - Trausse-Minervois
A.O.P. Minervois Having crossed the threshold, as you remove your coat, take care to remove your watch as well. There is no longer any rush. We are now on vineyard time. It is now the vine, along with the climate, which decides. For some time now, we have synchronized our internal clocks with those of the plants. Having learned that fighting, forcing and bending are useless; we have instead dedicated our energy to observing, listening, breathing and maybe even understanding. We invite your senses to come sample this rhythm of nature: the vine and its fragrances, the history of the varietal, a charming cabin in a vineyard setting. Here you can experience the wine, free from rules governing its making or its tasting. Our ancestors were winegrowers, our great-grandfather a barrel maker, our grandfather a wine broker… Indeed, we have approached wine from all angles! And, the essential is the lovely grape that we seek to draw out in every glass. The grape is where it all happens. In the wine storehouse, where each vintage reveals a unique personality, we search tirelessly for the perfect combination that will accentuate the grape, as it is, unique to its particular year...
