L'Auberge le Demi Sel welcomes you in Quillan situated in the Aude department. We have 5 Bed and breakfast rooms, a restaurant and a creperie. We are located on the outskirts of Quillan on the road (D117) which runs from Carcassonne to Perpignan.

We offer a pleasant terrace facing the Trois Quilles. Our restaurant has three rooms with 48 seats. We welcome you in a cozy atmosphere.

We offer delicious brasserie dishes. We also have a map of crêpes and galettes (pancakes). Our menus are from € 9.90 for lunch on weekdays. Also we have a children's menu for € 7.50...
  Specialities

"We were recommended this place by an English couple we met in Quillan. The restaurant is a short walk out of town. We checked the menu on one of our constitutionals and were worried that it did not seem to have anything suitable for my milk-free husband (not surprising for a crêperie). Late in our time in Quillan, we decided to try it, even if it meant my husband eating simple salad. As it turned out, that night they had a menu featuring Magret de canard which my husband said was excellent. My salad and crepe were very good. The building was being renovated when we were in Quillan in 2013 and the restaurant is very clean and new looking. There were three different eating areas and they were happy for us to sit wherever we liked, so the families eating there (two included children) spread out nicely".

The Corbières is one of the wildest areas of France with one of the lowest population densities. It is picturesque with wine growing areas alternating with garigue and mountainous countryside. It is located mainly in the Aude département and partly in the Pyrénées-Orientales département. The River Aude borders the Corbières to the west and north. To the south is the River Agly and to the east the the Mediterranean Sea. The name Corbières comes from "cor" a pre-Celtic word meaning "rock" and "berre" from the River Berre which runs through Durban. The eastern part of the Corbières with its Etangs, borders the the Mediterranean Sea and is called the Corbières maritimes. It has its own distinctive climate and characteristic vegetation known as thermomediterranean vegetation...


Limoux

A.O.C. Limoux

Limoux is best known for its sparkling wine, Blanquette de Limoux. This is reputed to be the oldest sparkling wine in France and dates back to 1531 when Benedictine monks from Saint Hilaire Abbey discovered that the wine they had laid down had fermented and formed bubbles. This was the beginning of Limoux’s bubbly - the Blanquette de Limoux which was the first AOC to be created in the Languedoc area. The process (the locals say) was stolen by Dom Perignon who went on to create ‘champagne‘. however the Limoux sparkling wine is a very high quality champagne substitute and Crémant, which was developed in 1990, has a top class reputation. Now a prestigious event attracting buyers from all over the world, “Toques & Clochers” puts up for auction the most promising barrels of AOC Limoux. A share of the proceeds are then used to finance the renovation of bell towers in surrounding villages. Every year the auction is hosted by one of France’s great chefs popularly referred to as a “Toques”, the traditional white chef’s hat....
