This charming restaurant, where one can eat outside under the cool shade of trees, in what was once the village school, is well worth visiting again and again.

Mylène and Christophe, have created a distinctive ambience, where food is both pleasure and art. Although best in the Summer months, the auberge has a sizeable dining room available out of season.

In summer, this restaurant specializes in dishes grilled over a wood fire located in the courtyard. Sunday lunch under the trees is a treat everyone should experience. The cheerful dining room is more formal, but very comfortable. The menu often features game such as sanglier (wild boar) or pheasant. The restaurant is on the left inside the charming village of Beaufort...
  "Our lunch at the Auberge de Saint Martin was served to us outside in the courtyard at Anthony's request. It was another perfect weather day (we really only had one cold day!) and the sun was bright and lovely and eating outside is always pleasant in such circumstances (especially if you are in a lovely well-kept courtyard with trees and flowers!). They brought us out a salad that was the best I'd ever had and I madly wrote down what I thought was in it: endive lettuce, ham, cheese, apple tomato, walnuts and O&V dressing. That may not be it at all, but heh, one can experiment. Pork in mustard sauce, three cheeses, and a lovely dessert of a Pear in wine sauce with an almond cookie AND to top it off Café Crème. Oh yes, it was a very nice meal..."

A.O.P. Minervois Surrounded by its private pine forest, the country house of Le Pech d'André dominates a vineyard that stretches gracefuly between dry stone walls, grass strips, scrub and hedgerows of almond and wild fig trees. The vineyard of Le Pech is turned towards the South (the better to admire the Pyrenees…), all in one piece in front of the family house. Soils from Tertiary limestones (Bartonian), composed of sandstone and marl, are perfectly suited to the cultivation of the vine. This terroir of Minervois named « les Mourels » is one of the earliest and warmest of the Minervois, between the Causses and the Serre d'Oupia which rises to nearly 300 meters. Our terroir, our agricultural practices and our desire not to adopt the latest « developments » of normative winemaking technology, wines of Le Pech d'André are atypical. More elegant than powerful, they offer a distinctive freshness and acidity. Their vivacity evokes the Cers, this so violent wind that stirs our Occitan souls!

A.O.P. Minervois Château d'Oupia, an old building from the 12th century, is located in the heart of the Minervois. Purchased by my great-great-grandfather in 1860, Château d'Oupia has continued to grow and invest in vines and wine. The first award was presented in 1908 by the Ministry of Agriculture. In 1969 my father André Iche became responsible for the operation and took over the renovation of the vineyard by adding new grape varieties that matched the terroir well, while preserving the oldest vines of Carignan. André planted his first Syrahs in 1975, opened a sales cellar in 1980 and matured for the first time in barrels in 1985 with the start of the Les Barons cuvée. This is the beginning of the awards, another vintage confirms this fame: Nobilis, Oppius, Emérantine. Part of the vineyard is located in La Caunette, the vinification takes place in Oupia. At the end of my studies in 1996, my daughter Marie-Pierre decided to stay on the farm. We currently have an area of 63 ha, divided between AOP Minervois (37 ha) and Vin de Pays de Hérault (26 ha). André passed away in 2007 after a long illness and left his working life to his family. Marie-Pierre and her mother run the family business. As a tribute to the founder of Château d'Oupia, they gave birth to a "Mémoire d´André" cuvée...

L'Oulibou is a fascinating place to visit. Only 3.5 km from Mailhac, it produces some award winning oils and olives which can be sampled in the very mill where they have been made. You can also see the whole process that olives go through in order to make them into a wide variety of oils. The 'lucque' is one of the main olives of the Languedoc Roussillon area and it under goes some magical transformation within the walls of this traditional mill. 2 kilometres from Bize, just off the main road between Beziers and Carcassonne, you will find l’Oulibo, a cooperative that produces some of the best olives and olive oils in France. Bize is part of the Minervois region that includes the village of Minerve 10kms to the north which was the site of a famous siege by Simon de Montfort and the consequent martyrdom of the Cathars. Nearby are Beziers (35 minutes) and Narbonne (25 minutes) with cathedrals, excellent markets, shops, museums, and much more...

The name of Ventenac is its etymology in Roman times: Villa Ventenachus. Castrum Venthenacum was taken in the twelfth century by Simon de Montfort at the time of the Cathars. This is the nineteenth century that Ms. Seguy Saint Siran built the castle in its present form, giving it its prestigious appearance reminiscent of a religious building.
