Located on the castle square, in one of the oldest houses of the medieval city, the Auberge de Dame Carcas offers a regional cuisine including the inevitable cassoulet with duck confit, but also a delicious semi-cooked foie gras, fleur de sel and onion jam, "coustellous" of pork with honey, or filet mignon with porcini mushrooms (depending on the season).

Other specialities of the house: meats grilled over a wood fire, what could be better than a good andouillette from Troyes or beautiful duck breasts on the embers... a flame grilled pig perhaps?
The kitchen, opens to the dining room, allows you to see the chef at work on his stoves, to the delight of the guests. The plates are copious and carefully prepared, and the service is friendly. A sure value!
 This casual restaurant specialises in suckling pig (spot the model porkers all around) and carries a fine selection of well-priced local wines (including a delightfully smooth house red of Minervois.

TThe ground floor is cosy and agreeably rustic, and you can see the chefs at work. The larger upstairs room offers more light, and there's a summer terrace too.

"After a long day of traveling, my friend and I ended up on the cobblestone streets of Carcassonne, searching for a place to satisfy our hunger while not destroying our pocketbooks. Auberge de Dame Carcas was the best we could find, offering three menus, their regular being only 15 euros for a 3 course meal. Lovely"!

From the medieval city that you can visit before or after the walk, it is interesting to go to the top of Pech Mary to, in addition to a 360 ° a panoramic view of the city and its surroundings and especially the Porte Narbonnaise. Park in the free parking place Place Gaston Jourdanne. (D/A) Walk southeast and follow Rue Trivalle at the end of Pont Vieux for 300 meters. Continue to the right on Rue Gustave Nadaud to reach the square in front of the entrance to the city (Porte Narbonnaise). (1) Cross this square towards the drawbridge and turn left on the path below the ramparts and the cemetery. After about 200 meters ... (2) Pass the barrier on the left, turn left and then immediately right onto Chemin de Sainte-Croix. Continue straight to reach le calvaire de Sainte-Croix and then the passage under the bypass. (3) Pass under the bridge and just afterwards exit Chemin de Sainte-Croix to go up left and turn right onto Chemin de la Porte de Fer. After 700 meters, leave the path to the right towards the Hauts de Sainte-Croix and continue for about 150 meters to reach the entrance of domaine de la Porte de Fer...
