Limoux for a few
years to
discover the
world, but
ultimately chose
to return to the
winery where
this fabulous
effervescence is
created. For
over 10 years,
she has
successfully
taken up the
challenges of
perpetuating the
Antech style by
focusing on
exacting
methods,
creation and
insuring the
future of the
House, with the
support of
Georges and
Roger. The acts
of making wine,
tasting,
assembling,
sampling,
creating,
improving,
developing,
sharing, and
persuading add
up to an
continual
commitment,
every moment of
the day. Sound
agricultural
methods, a
strong
dedication to
sustainable
development, and
improving cellar
hygiene have
been day-to-day
practices of the
House even
before methods
or rules were
formally imposed
by outside
authorities.

Specialties
We practice an enology that is simple, authentic, and respectful of the environment.
Our philosophy is to give the vine all that it needs, but only as much as it needs, and we have advocated “clean” agricultural practices for over 10 years now.
All grapes used in the composition of our Cuvées are certified Terra Vitis. We are also signers of the “Charter for the progress of sustainable development,” drawn up by businesses in the agricultural and food industries of Languedoc-Roussillon region.
Furthermore, we try to recycle as much waste material as possible, and have implemented a plan of action for reducing our energy consumption.
We actively contribute to protecting our planet because we believe that it is everyone’s responsibility to do so.
As a final note, our House has committed itself for many years to a truly high quality approach that conforms to ISO and IFS certification standards.
In the early days of September, when the grapes are harvested—only by hand—each basket is individually inspected. The grapes, fully intact, are immediately pressed to avoid any chance of oxidation. During the pressing process, rigorous selection takes place and the Cuvée and the taille (pressing) are separated. The musts are cooled to 7-8 °C (45-47 °F) and then clarified by sedimentation in a single night, after which comes the racking, or separation of the grape juice from the pulp. The juice, or must, is then fermented in stainless steel fermentation vats. We have the best possible facilities to ensure perfect and continuous temperature control. This is an essential condition to obtain a very rich aromatic palette. The primary fermentation takes from 15 to 21 days. The base wines are then ready; their leading sensory qualities are visual clarity, rich and straightforward aroma and a clear-cut taste. The alcohol level is between 10° and 11°, with a total acidity of between 4.6 and 5.5; PH is between 2.9 and 3.1.

Limoux is best known for its sparkling wine, Blanquette de Limoux. This is reputed to be the oldest sparkling wine in France and dates back to 1531 when Benedictine monks from Saint Hilaire Abbey discovered that the wine they had laid down had fermented and formed bubbles. This was the beginning of Limoux’s bubbly - the Blanquette de Limoux which was the first AOC to be created in the Languedoc area. The process (the locals say) was stolen by Dom Perignon who went on to create ‘champagne‘. however the Limoux sparkling wine is a very high quality champagne substitute and Crémant, which was developed in 1990, has a top class reputation. Now a prestigious event attracting buyers from all over the world, “Toques & Clochers” puts up for auction the most promising barrels of AOC Limoux. A share of the proceeds are then used to finance the renovation of bell towers in surrounding villages. Every year the auction is hosted by one of France’s great chefs popularly referred to as a “Toques”, the traditional white chef’s hat....

History tells us that Blanquette de Limoux, the world's first sparkling wine,
dates as far back as 1531. At the time, the monks of the Benedictine abbey of
Saint-Hilaire, near Limoux, were producing a somewhat unusual white wine in
their cellars. Inside its glass flask, with a cork top - very rare for wines at
this time - it acquired a natural sparkle. This was the forefather of the brut
which is tasted today at the world's most prestigious tables. Since they first
started cultivating vines, the growers of Limoux have aimed at maintaining the
originality of the Blanquette de Limoux growth and developing its quality. The
region's surrounding hills protect it from the extremes of the Mediterranean and
Atlantic climates, with the area enjoying a microclimate particularly suitable
for making quality white wine. The vines classified in the appellation are
always planted at the top of southern-facing slopes, giving the best exposure.
The soil here is shallow and sparse, full of chalk and stone....
