Immerse yourself for a day in the silent universe of the Cistercian Monks, who had only the cicadas’ song to distract them from contemplation.
Standing in front of its high walls, it’s hard to imagine just how vast the Abbey is. Once you have passed the gate, the splendour of the ochre sandstone building will be revealed.
It is one of the most beautiful Cistercian abbeys of France, founded in 1093 and saved from ruin in 1908 by art patrons Gustave and Madeleine Fayet.

While discovering the dormitory and refectory, you will plunge into history and learn about the particularities of the Cistercian Order... 
You will find out, for instance, that the professed monks never met the conversi, or lay brothers, who were manual workers. They all lived in the Abbey, but in separate quarters. On a sunny day, end your visit on a colourful note: the garden with its rose bushes, which brighten the cloister. The Abbey and its 24 granaries was one of the richest abbeys of the Order. It is located at the heart of the protected massif of La Clape, surrounded by pine, cypress and boxwood trees...
  Cistercian hospitality
Take a seat at the Table de Fontfroide, a restaurant located in a renovated sheep-fold, and enjoy a meal that is far from monastic! Try one of the chef’s specials, mackerel pie served with crushed tomatoes, caramelised onions and basil. For dessert: spiced apples stewed in the abbey wine. Frugality is definitely not on the menu here!

Climb higher
For a digestive stroll, there is nothing like a climb up to the Cross, at the top of the hill, where you will have a breathtaking view over the Abbey and its gardens.

Taste the divine nectar
Back in Abbey, enjoy a wine tasting session in the cellars. Follow the advice of the sommelier and fall under the spell of the white and red wines, Muscat or Merlot.

Gregorian chant
If you are in Fontfroide for Easter (Sunday, March 23rd), listen to the Gregorian Choir of Paris singing Christus Factus Est. Just close your eyes to be transported back into the Middle Ages. In August (from 1st to 5th), the walls of the Abbey will resound to the Music and History Festival, featuring Jordi Savall and Montserrat Figueras.

- The last entry is half an hour before the site closes.
- November to March: from 10:00 to 12:30 an from 13:30 to 17:00 
- April to July: from 10:00 to 18:00
- July to August: from 9:30 to 19:00
- September to October: from 10:00 to 18:00
- In July and August, the days of the Nocturne Fontfroide la Nuit, the site remains open until 8 p.m.

A.O.P. CorbièresThe vine is present at Fontfroide since 900 years... The Cistercians planted vines for grapes. Grapes to make wine, Eucharistic necessity. As the "Rule of St. Benedict," which governs the life of the community, allowed to drink wine, for that matter, so do good. Slowly, over time, the monks select the best plots, choose the right direction, learning the 'terroir', tame the grape varieties, winemaking refine their methods. Their wine is very famous. Today, the same family, became the owner in 1908, still cultivates these plots, animated by a passion similar to that of his venerable predecessors. An exceptional terroir... The terroir of Fontfroide is part of an east-west trench, on the foothills of the Massif Fontfroide rampart before the Mediterranean. The vines are planted on the edge of scrubland where pine trees, rock roses and heather reign supreme. The sandy clay soils formed from parent rock pink sandstone used to smoothly bring the grapes to its most beautiful expression through an important water reserve. In this fresh soil, red and white grapes ripen more slowly. Grapes, and develops an exceptional aromatic maturity which is found in wines with intense fruity aromas, unusual....

The original religious foundation on this site was a Benedictine establishment. The position is in a classic situation for a Benedictine abbey, tucked into a narrow, sheltered valley remote from the outside world. It is located in the Corbières area in the Aude département, just off the Autoroute between Narbonne and Carcassonne. The Cistercian Abbey of Fontfroide was founded in 1145, and became one of the most important and richest Cistercian abbeys in the Midi. It was the murder of a monk from Fontfroide, the papal legate Pierre de Castelnau, at dawn, on the 15th of January 1208, that provided Pope Innocent III with his pretext for the Cathar Crusade. Olivier de Termes is though to be buried here in the chapel of Saint Bernard (dedicated to Bernard of Clairvaux), which he founded. One of Fontfroide's abbots, Jacques Fournier, became Bishop of Pamiers in 1317 and a keen inquisitor (responsible for the arrest of the village of Montaillou)...

If you love excellent food and wine, then there can be no finer restaurant in the South of France as Auberge du Vieux Puits. This 3 star Michelin restaurant is run by the celebrated French chef, Gilles Goujon. I can not recommend this restaurant highly enough. The food, the service, the wine, the cheese . . . all were excellent. Nobody has given Gilles Goujon anything for free. On the contrary. In a bucolic atmosphere far from the mundane noise, in an austere building –sold by the tiny Town Hall– he has been progressively restoring for a decade, he has been able to captivate plenty of customers and reach the top of the French guides: 5 hats in Gault Millau and 3 stars in Michelin. We can say we are before a self-made man who had to fight and sweat blood to reach fame; a fame very few chefs deserve so clearly...
