The chief Jean-Claude Visentin and his wife Claudine welcome you in a warm kitchen with quality, including recommended by Gault Millau.

Besides the excellent cassoulet of Castelnaudary, as did her grandmother , the chef can taste specialties of foie gras, confit and duck breast , pork chop with porcini mushrooms, supreme of guinea fowl, pigeon roti and even fish dishes depending on availability.

The Tirou Restaurant offers lunch in his garden enjoying the shaded terrace and sheltered from the wind. The bottom of the garden is a haven of greenery and trees along the famous Canal du Midi.

  Specialities

Castelnaudary is the capital of the 'Pays de Lauragais region and a town of charm and history. It sits astride the Canal Du Midi and is famous for its haricot bean dish Cassoulet, the festival for which (Fete Du Cassoulet) is held each year during the 7 days that make up the last week of August (in 2010 that is the 23rd to the 29th August).

Castelnaudary is the home to the largest port on the Canal Du Midi, the 'Grand Bassin' which is some 7 hectares in size. A good time to see it is on the 13th July when Castelnaudary celebrates 'National Day' with it's own fireworks display launched from a boat in the middle of the Grand Bassin...

Cabardès

The Cabardès region is situated to the west of Languedoc and to the south of the central massif, a geologist's dream, balanced between east and west, the sun and the coolness, the heathland and the mountain. It is here that the winds cross. They bring the intense mediterranean heat necessary for southern "cépages" (grape types) such as syrah and grenache, and the cool atlantic humidity for the ocean "cépages": merlot, cabernet-sauvignon, cabernet-franc, cot and fer-servadou, to prosper. The vineyards and wines of Cabardès have been recognized as AOC since february 1999. The quality of the grapes, the wine-making, the blending of the "cépages" and the keeping of the wines has allowed us to obtain the best balance between fruit and structure, fullness and complexity, intensity and elegance. Cabardès assembles 30 châteaux and domaines over 500 productive hectares spread amongst 18 villages. 20000 hectolitres are produced each year,of which 60% are exported....


Malepère

A.O.C. Malepère

The Malepère region was awarded AOC status on May 2nd 2007. It is a hilly area south-west of the city of Carcassonne which is included in the appellation along with 31 other towns and villages. Although the area claims a great history of wine making it was in the 1970’s that the vineyards began to be replanted and VDQS status was granted. VDQS is the intermediary wine designation between Vin de Pays and AOC and is a testing ground for would-be AOC’s to prove that wines from all the producers share a common personality before they can be awarded full AOC status. Although an obscure region the Malepère is well worth a visit and offers a very different terrain to the more recognizable Languedoc appellations. There are many interesting medieval circular villages to visit. They were built this way to form ramparts to act as protection for the inhabitants. The Cathar religion was strong here and the area is immersed in history and folklore...

Created in the late '70s by damming the river Ganguise, this is a beautiful 280 hectare lake, which has become a centre for swimming, sailing, windsurfing, walking and wildlife. The attraction of 6 km of water, caused the Castlenaudary sailing club to move to the lake in the mid-80s. From their club on the western end of the lake, they now offer catamaran, sailing dinghy (Laser, 420 & 470), windsurfer, pedaloe and canoe hire. During July and August they also offer 5 day sailing and windsurfer courses. All around the lake there are beaches suitable for sun-bathing and swimming as well as a restaurant and a couple of bars....

Bram

Bram

Bram is a commune in the Aude department in the Languedoc-Roussillon region in southern France. Bram is part of the old province of Lauragais, and is 790 km from Paris. The CD33 road to the village follows the Roman road, the Romans settling in the area because of a climate which balanced the warmth of the Mediterranean with the freshness of the Atlantic. In 60BCE, they began construction of Bram and called it Eburomagus. Roman remains suggest the town was less round than the current town. Eburomagus disappeared. The modern town was born in the 12th century, built around its fortress church. By the 17th century Bram had outgrown its walls and expanded in concentric circles...

An abbey that combines the austerity of the Cistercian tradition with the flamboyance of its sculptures and its romantic setting. It has all the charm and poetry of a garden inspired by the middle ages but placed in what was once a monastic enclosure. It offers a fine example of architecture and sculptures that are typical of southern Languedoc Gothic of the 13th and 14th centuries. In garden, enclosed by living osier fencing, cucumber and squash plants spill over the wickerwork and climb to invade the espaliered peach trees. Marrows and old varieties of tomato form part of the decor. On the rockery, plants grow that were used in the middle ages for their medicinal properties or for dyeing or decorations. Ancient tiles form a border to the flowerbeds. The singing of parakeets mingles with the gentle sounds of the fishpond. This unusual and restful garden is somewhere really unique to visit...
