Restaurant Le Carnotzet - Couiza

This restaurant is nestled at the foot of Rennes le Chateau and bathes the mystery of Abbé Saunière. They offer all their passions with gourmet foods, a mixture of authentic cuisine and local gourmet cuisine.

Actually like the Chef! ! Alain Ibert-Jorge . Rich in the kitchen of these origins, it also acquired its gourmet cuisine during his many years in Paris.

It is not uncommon in Veronique and Franck , the seafood gratin lobster sauce Béarnaise Garbure borders on the space of a weekend on their slates suggestions.

But do not forget what has served as an alibi the decoration of this place "a Savoyard chalet" the inevitable "specialties Savoyarde" squeegees , tartiflettes , melted and reblochonnade....

Corbières

A.O.C. Corbières

The Corbières is one of the wildest areas of France with one of the lowest population densities. It is picturesque with wine growing areas alternating with garigue and mountainous countryside. It is located mainly in the Aude département and partly in the Pyrénées-Orientales département. The River Aude borders the Corbières to the west and north. To the south is the River Agly and to the east the the Mediterranean Sea. The name Corbières comes from "cor" a pre-Celtic word meaning "rock" and "berre" from the River Berre which runs through Durban. The eastern part of the Corbières with its Etangs, borders the the Mediterranean Sea and is called the Corbières maritimes. It has its own distinctive climate and characteristic vegetation known as thermomediterranean vegetation...

Vin de Pays d’Oc,
Vin de Pays de l’Aude

Vin de Pays d’Oc, Vin de Pays de l’Aude

Vin de Pays means 'country wine' to the French, but to outsiders it can mean New World with a French accent. These are the wines which the French authorities unreservedly allow to be labelled with the grape variety from which they were made. It is difficult to over-estimate the importance of this large and growing category of wines for the future of the French wine trade. The French themselves may have tended to see any Vin de Pays as distinctly inferior to any appellation contrôlée wine, whereas many of their customers abroad see the better Vins de Pays as good-value, user-friendly, sometimes high-quality non-conformist emissaries from the world's most revered wine producer....

The Angel Art Sanctuary

Lorrie's Angels - The Angel Art Sanctuary - Alet les Bains

Lorrie's Angels

At first sight the Sanctuary is an Art Gallery but many people describe it as being more than a Gallery – a place with a unique atmosphere, that is comforting and at the same time inspirational and contemplative. The first Sanctuary was established in Rathdrum, Ireland in 2002, the country of Lorrie’s birth. It was by word of mouth from this ideyllic countryside location that more and more people came to visit and experience the Art and uniqueness of the Sanctuary....

Rennes les Bains

Rennes les Bains

In the early days in the Corbières at Rennes-les-Bains, when people were converted they were baptised. This was an essential major ceremony of the new Christianity and had the character of a covenant with God. Baptism washed away sin so one could begin a new life in which salvation and personal enlightenment were assured. Baptisms were whole body immersions and Mary was authorised to perform baptisms, unlike most women of the time. . . . complete immersion, including the hair, was the norm and among the observers, fellow Christians waiting to welcome the newcomer to the fold, one of them was appointed to ensure this complete immersion. The newcomer had to be completely naked. Then he or she was welcomed lovingly, with hugs and kisses, into the new Christian community. Where, 2,000 years ago in the region of Rennes-les-Bains, were there suitable places for whole body baptism? Just outside the town is the Fontaine d'Amours – lover's spring. If you bathe there together, your love will last forever. It's the tiniest mental leap here, from romantic love to everlasting and spiritual love. Did this legend come from the baptism, done in the new loving religion, that took place there, after which people hugged and kissed?..

Château des Ducs
de Joyeuses

Château des Ducs de Joyeuses - Couiza

This listed 16th century chateau is located on extensive grounds on the banks of the River Aude. The ancient fortress-turned-hotel subtly blends medieval tradition with modern confort - and it has an excellent restaurant too (it is important that you reserve a table in advance). The house was built by Jean de Joyeuse, first Governor of Narbonne and Lieutenant General in Languedoc, between 1540 and 1550, and his son, Guillaume III assumed the job of completing this magnificant chateau after he died. With a beautiful courtyard where one can dine in the summer months, the castle is a very special place to stay. With a swimming pool and tennis court, the hotel is a perfect base to combine relaxation with good food. Close to Cathares and 30 km to Carcassonne, there many cathedrals and historic monuments to visit. The Chateau does not have an elevator, so if you have a problem with stairs this may not be the best choice for you....

Gorges

Gorges de Pierre Lys

From Quillan to Axat. Impressive passage between the cliffs. The "Trou du Curé" recalls the memory of Father Armand Felix, vicar of St Martin Lys, who drilled with the help of his parishioners the first tunnel, a dozen yards long, in the 18th century....
