Welcome to our restaurant Le Temps Danse in Pennautier. It is located in the center of a charming village in the Aude, surrounded by vineyards, where we welcome you. Nicolas, cook for more than 20 years, offers traditional home cooking with a full midday formula, with regional specialties; Cassoulet, Fréginat, Escargots à la catalane homemade and using only fresh, seasonal produce. A shaded terrace in summer, a group room and a dynamic team for you.

A village restaurant that keeps its promises and contributes significantly to the attractiveness of this charming corner of the Cabardès. A friendly place where fresh and seasonal products are featured, a kitchen unfussy where the product is the real protagonist in the plate. Thursday around noon we always cook with a theme for our fans. Warm and friendly, excellent value. And do not deprive yourself of this simple little pleasure!
  Specialties

Pennautier, small village of just 2500 inhabitants, Pennautier pulls out of the game at the tourist level of real interest to those who visit the Aude. On aileurs, municipal authorities are struggling to treat the reception of newcomers and people passing. From an architectural standpoint, Pennautier has many attractions, from the entrance: a pretty tree-lined promenade, a former tilery restored with charm, a bridge over a lovely river course, and antique streets who book more than one surprise. The beautiful castle built under Louis XIII raillonement contributes to this small town in Languedoc. Local associations animate a rich sports, cultural and social life. Highlights in terms of entertainment: piano festival in August, and other events punctuating the year.

The AOC of Cabardes was only created in 1999 and relishes a schizophrenic personality, as both the most westerly vineyard of the Languedoc and the most Easterly of South West France. This is reflected in both the terroir and climate, with Atlantic and Mediterranean influences evidenced and a concomitant blending of all the famous grape varieties from these areas. The results can quite magnificent. Cabernet Sauvignon and Merlot, relatively rare in the Languedoc, are perfectly at home here, and marry effortlessly with more traditional Mediterranean varieties, especially Syrah and Grenache. The wines tend to have a Bordelais grip as well as a Languedoc warmth; in short the best of both worlds.

A.O.C. Cabardès A.O.C. Minervois Built under Louis XIII by Bernard de Pennautier, Treasurer of the States of Languedoc, Château de Pennautier (a historic monument) has been in the family since 1620. The vineyard has been entirely refurbished since the 1960s and the higher plots of land planted with vines. The direct heirs of the Pennautier family, Nicolas and Miren de Lorgeril are the 10th generation of winegrowers since the estate was founded. They took over in 1987. … and a terroir ! In the heart of the Cabardès appellation, the vines grow on the sunny, rugged hillsides south of the Montagne Noire, set at an altitude of 200 to 400 metres. The views from up there are breathtaking: at a glance, you can see the entire Pyrenean mountain range to the south, the Massif Central to the north, and the famous town of Carcassonne just a few miles away. This terroir combines clay-limestone soils,the Mediterranean heat, an Atlantic influence and the coolness of the mountains. Many areas of garrigue and rock on the Montagne Noire include vines, up to an altitude of 400 metres. - 46 hectares, with new grape varieties planted over the last 35 years, comprising 90 hectares AOC and 56 hectares Vin de Pays. - 21 hectares of Cabernet, 5 of Carignan, 6 of Cinsault, 22 of Chardonnay, 4 of Cot, 21 of Grenache, 36 of Merlot, 2 of Sauvignon, 26 of Syrah and 3 of Viognier: a stunning combination of grape varieties! - 6 kilometres north-west of Carcassonne. - 230 meter, this is the altitude of Pennautier, although its vines grow much higher up in the Cabardès appellation...

A.O.C. Cabardès  The Auzias Domain, located two steps away from Cité de Carcassonne and Canal du Midi, is exploited by Chateau Auzias-Paretlongue in Cabardès, which story dates back to the beginning of the 12th century. Some ancient writings mention a spendid gallo-roman villa and describe many battles that took place there. The vineyard is very old because as early as in 1111, in the middle of the cathar period, the Carcassonne Chanoines founded the Notre Dame de Pareti-Logi abbey. The vineyard extends without interruption to around 160 hectares and it goes through two villages of Cabardès : Pennautier and Villemoustaussou, only two step away from Cité de Carcassonne and Canal du Midi. These two sites are labelled as patrimony of Humanity. The 80 hectares vineyard is composed of an exceptional clay and limestone terroir dating back several thousand years. On one side, there are hills covered by rolled pebbles (AOP Cabardès), at the foot of Montagne Noire. On the other side there are small plains bordered by the Fresquel river (Wine from the Cité de Carcassonne). The Paretlongue vineyard was one of the first grapes "improver" to be planted in Languedoc...

There are trails through forests, over the hills, into the mountains and around the vineyards. Once you start looking, you’ll realise that there are trails everywhere. Open all year. School VTT. Mountain bike trails and walking tours. VTT courses, two wash areas, a repair shop. Framing themed walks with instructors...

Bram is a commune in the Aude department in the Languedoc-Roussillon region in southern France. Bram is part of the old province of Lauragais, and is 790 km from Paris. The CD33 road to the village follows the Roman road, the Romans settling in the area because of a climate which balanced the warmth of the Mediterranean with the freshness of the Atlantic. In 60BCE, they began construction of Bram and called it Eburomagus. Roman remains suggest the town was less round than the current town. Eburomagus disappeared. The modern town was born in the 12th century, built around its fortress church. By the 17th century Bram had outgrown its walls and expanded in concentric circles...
