In 1093, a Benedictine monastery is founded in Fontfroide. When Saint Bernard comes to the Languedoc in 1145, it joins the order of the Cistercians. The same year the construction of the church begins. With its pointed barrel vault rising to a height of 20 m, it represents in impressive manner the simplicity of Cistercian architecture.

What to visit in Fontfroide ?

- Visit the abbey and his rosegarden : discover the beauty of an nine centuries old cistercian abbey. And, from April until October, the 2000 roses behind the church.

- Visit the terrassed gardens : newly restored, these gardens are open from may until September.

The Corbières is one of the wildest areas of France with one of the lowest population densities. It is picturesque with wine growing areas alternating with garigue and mountainous countryside. It is located mainly in the Aude département and partly in the Pyrénées-Orientales département. The River Aude borders the Corbières to the west and north. To the south is the River Agly and to the east the the Mediterranean Sea. The name Corbières comes from "cor" a pre-Celtic word meaning "rock" and "berre" from the River Berre which runs through Durban. The eastern part of the Corbières with its Etangs, borders the the Mediterranean Sea and is called the Corbières maritimes. It has its own distinctive climate and characteristic vegetation known as thermomediterranean vegetation...

The cornerstone of organic farming is the soil. Maintaining a healthy, biologically active soil is the main objective for an organic farmer. In the vineyard it means cultivating the soil and planting cover crops, instead of applying herbicides. It means using natural fertilizers, such as composted animal manure, versus chemical fertilizers. Organic growers use no synthetic growth-regulators (such as Alar). As for not using pesticides, the organic alternative is to encourage natural predators of insect pests instead of using poisonous insecticides. Organic farmers promote "biodiversity" and allow plants other than vines to grow in and around the vineyard. Biodiversity helps regulate the vineyard soil by attracting beneficial insects, spiders and predatory mites, as well as provide shelter and food (pollen, nectar and other bugs), and replaces the need for chemical pesticides or insecticides. What cannot be fully controlled through biodiversity can still be managed organically, through the use of naturally occurring plant or mineral extracts, which leave no residues in the soil. In wet climates the main difficulty is raised by the use of copper sulfate against mildew, which leaves over time levels of copper in the soil that need to be monitored....

The Massif de la Clape – ‘stone’ in local dialect - was, until recent geological time, an actual island. This insularity, still apparent in the landscape, has given rise to a particularly rich and original variety of plant and animal life. Today, the La Clappe Heights remain one of those unusual, spellbound places where modem man can still feel, with ahnost every step he takes, the imprint of his long-gone ancestors. The Oeil Doux is a natural waterhole surrounded by cliffs with an abrupt eastern face overhanging the surface 130 feet below (40m). The cliff is made of hard fissured limestone whose crevices are full of red clay; it was formed during the middle geological era. The north side, less steep, is made of marly limestone from an older geological age and is particularly rich in fossile deposits, notably Orbolitines (Mesorbitolna texana), Brachypodes, Lamellibranches and sea urchins (dating from the Clansayesian period). The presence of this hole at this site can be explained by the fragility of the wider area which displays many faults; two of them major. The water in the hole is salty : the salinity, as well as the level, varies with the rainfall and the movements of the Mediterranean just a mile (1,500m) away. The whole zone is part of a submerged karstic formation....

The club here is called Le Pitch 'n' Putt Sainte Rose, and although there is not a full golf course there is a very good eighteen-hole pitch and putt course, a driving range, pro shop and a clubhouse. It is really of more interest to holidaymakers and beginners than to serious golfers, but professional lessons are available, and competitions are held regularly....

The Horreum is the only building dating from classical times that can still be seen in Narbonne. It is a former underground warehouse and dates from the end of the first century BC and was probably the below-ground section of a market. Two of its galleries can be visited and the sound and light show that has been installed creates an atmosphere rather like that of a market-day. Stone remains have been put on display in the alcoves that open off the north wing to remind visitors of the splendours of Narbo Martius, the capital of the Narbonne region.
