Restaurant Le Relais Romain - Villesèquelande

You've probably passed by this restaurant without even seeing it, it is true that we are far from the beautiful stone buildings in the very special character "showy" which appear to be sometimes, mere "tourist traps".

In the restaurant Ghislaine Jean and their daughter, Delphine, offers the basics: the generosity, friendliness and authenticity. Ghislaine kitchen, every day as if it received friends, the kitchen is traditional with quality products . Menus, hearty salads such as "greedy", foie gras mi-cuit house, beautiful steaks and grilled specialties around the fish like monkfish with shrimp and scallops or salmon-Jacques à la plancha cooked sauce Dill, served with wines from local producers. In Summer you will share the terrace in the shade of a weeping willow with visiting tourists and regulars...
  Specialities

"A husband-and-wife run restaurant in a tiny village on the highway between Castelnaudary and Carcassone also situated on the Canal du Midi, this place is the French equivalent of a middle American home style place. The husband/waiter will come pick you up from the Canal du Midi if you call ahead for a reservation.

This was very handy for us as we were moored at the Canal and without a car. The wine recommended with our meal (a Fitou) was good and just right for our food choice. My entrecôte was well prepared and accompanied by excellent pomme frites. My companion enjoyed his duck confit with its crispy skin.

The artwork in the entry reflected the wife/cook's love of John Wayne."

beans and various meats known as Cassoulet..

Cabardès

A.O.C. Cabardès

The Cabardès region is situated to the west of Languedoc and to the south of the central massif, a geologist's dream, balanced between east and west, the sun and the coolness, the heathland and the mountain. It is here that the winds cross. They bring the intense mediterranean heat necessary for southern "cépages" (grape types) such as syrah and grenache, and the cool atlantic humidity for the ocean "cépages": merlot, cabernet-sauvignon, cabernet-franc, cot and fer-servadou, to prosper. The vineyards and wines of Cabardès have been recognized as AOC since february 1999. The quality of the grapes, the wine-making, the blending of the "cépages" and the keeping of the wines has allowed us to obtain the best balance between fruit and structure, fullness and complexity, intensity and elegance. Cabardès assembles 30 châteaux and domaines over 500 productive hectares spread amongst 18 villages. 20000 hectolitres are produced each year,of which 60% are exported....

Malepère

A.O.C. Malepère

The Malepère region was awarded AOC status on May 2nd 2007. It is a hilly area south-west of the city of Carcassonne which is included in the appellation along with 31 other towns and villages. Although the area claims a great history of wine making it was in the 1970’s that the vineyards began to be replanted and VDQS status was granted. VDQS is the intermediary wine designation between Vin de Pays and AOC and is a testing ground for would-be AOC’s to prove that wines from all the producers share a common personality before they can be awarded full AOC status. Although an obscure region the Malepère is well worth a visit and offers a very different terrain to the more recognizable Languedoc appellations. There are many interesting medieval circular villages to visit. They were built this way to form ramparts to act as protection for the inhabitants. The Cathar religion was strong here and the area is immersed in history and folklore...

Carcassonne,
La Cité

Carcassonne, la Cité - Carcassonne

The Walled City of Carcassonne is known first and foremost as a fortified medieval town; but this rocky outcrop has been occupied by man since the 6th century B.C., first as a gaul settlement, then as a Roman town fitted with ramparts as early as the 3rd and 4th centuries A.D. On the western face of this primitive fortification rests the castle, built in the 12th century by the vicomtes Trencavels. In the early 13th century, Carcassonne was taken by Simon de Montfort during the Albigensian Crusade, then annexed to the royal estate. Fortification works lasted throughout the 13th century, with the construction of the outer wall and the modernisation of the inner rampart, making this place an impregnable fortress. The Cité lost its strategic importance after the signing of the Pyrénées Treaty in 1659. In the second half of the 19th century, it underwent a major restoration project supervised by Eugène Viollet-le-Duc and was included by UNESCO in the World Heritage List...
