A.O.C. Minervois

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

There are thousands of grape varieties contributing to a vast array of different wine styles with each variety having its own distinct flavours and characteristics. Varieties can be made uniquely to make a wine, in whch case the wine is known as a varietal, or collectively with other varities, when the wine is known as a blend. The soils and ‘terroirs’ in the Aude area are very varied, from Schist, Sandstone, Marl, Gravel, Pebbles, Limestone, to Granit and Alluvial soil; thus making many marvelous and different styles of wine. Also in this massive area are many different grape varieties, the reds include Carignon, Cinsault, Granache Noir, Syrah, Mourvèdre, Cabernet Franc, and Merlot. The whites, Chardonnay, Granache blanc, Picpoul, Marsanne, Roussanne, Vermantino, Mauzac, Chenin and Clairette...

A place, a history, a passion ... Cross the aisle vault, lined tanks of old Verrees, enter the heart of our cave and visit the museum. Follow the marked route and discover the old tools, cooperage, carriages and wagons old. The Castle of Ventenac was erected in the eighteenth century on the foundations of an ancient castle. The name of Ventenac is its etymology in Roman times: Villa Ventenachus. Castrum Venthenacum was taken in the twelfth century by Simon de Montfort at the time of the Cathars. This is the nineteenth century that Ms. Seguy Saint Siran built the castle in its present form, giving it its prestigious appearance reminiscent of a religious building. At his death, the vineyard, the cellar and the castle became the property of Pauline Meyer. It is in 1938 that deal with the threat of war, the Meyer family left France....

In Villeneuve Minervois is born the first and only fraternity Languedoc, dedicated to the truffle, the fungus also known by gourmets "Black Gold". Thus, the Maison de la Truffe was born in this village in the Minervois. Installed on 300 square meters, it has 4 themed rooms that lead the public to the discovery of the truffle.... The truffle markets of Villeneuve Minervois: In December, January and February as markets are held, full harvest period of the nose. It is then that its flavors are more intense and the most delicious truffles...


Lac de Jouarres

Lac de Jouarres is just outside Olonzac on the Pepieux road and offers a delightful alternative to crowded beaches and long drives on hot days. This man-made lake covers 100 hectares and contains 4 million cubic metres of water. Here there is a restaurant and bar, windsurfing and boating facilities in addition to fishing and wildlife areas. Walking its perimeter will take about an hour and is a very pleasant way to spend the time. Many families come here in the Summer months to sunbathe and enjoy the water in peace and safety...

Oppidum d'Ensérune - Nissan-lez-Ensérune

Come and visit the archaeological site of Ensérune lying ten kilometres from Béziers between the Languedoc garrigues and the shores of the Mediterranean, and discover one of the most important Gaulish villages in the South of France. The Oppidum d'Ensérune is an ancient hill-town (or oppidum) near the village of Nissan-lez-Ensérune, France, located between Béziers and Narbonne close to the D609 (formerly RN9) and Canal du Midi.  The fields at Montady, below the Oppidum was the swamp of Montady, which is now wedge shaped fields separated by irrigation ditches that converge in the centre. In the 13th century, the swamp was drained; the ditches allowed water to flow to the centre of the circular depression, from which it was conveyed through underground pipes several kilometres to the south. The drainage is still functional and remains in use....

Minerve has been selected as one of Les Plus Beaux Villages de France (‘The Most Beautiful Villages Of France’). Historically, the village has been the capital of the Minervois wine region. The main bridge leading into the village is closed to all passenger vehicles not owned by residents of Minerve. Of all of the original fortifications, only a slender octagonal tower, known locally as the Candela, survives. The village is situated on top of the gorge of the River Cesse in a naturally strong defensive position. Near the village the river disappears underground in large, naturally-carved tunnels....

Apart from the abbey, the attraction of Caunes lies in its rich historical and architectural heritage. The façades of the buildings are adorned with numerous architectural features dating from the 15th and 18th centuries. Remains of the fortified walls which surrounded Caunes can be seen on a walk through the village. Other more recent monuments which reveal a way of life and traditions now dying out are also worthy of mention, such as the old wash houses, the irrigation channel and the cobbled lanes....
