In 1998, Jérôme became Sous-Chef at Hôtel de la Cité, working as part of Chef Franck Putelat’s team. He travelled extensively to promote the hotel and its French haute cuisine in Madeira, Washington, Tallinn, Riga, Tokyo, St. Petersburg, Moscow, St. Martin and in Rio de Janeiro. His hard work was rewarded in 2006 when he was appointed Executive Chef. Jérôme has taken part in several top-level culinary competitions. In December 2005, he won the prestigious “Pierre Taittinger International Culinary Award”

Régis Chanel Chef Pâtissier
Growing up in a family of cooks, Régis Chanel could not see himself doing anything outside the kitchen. He trained as a pastry cook and spent his early years working in the pastry department of such famous restaurants as Hotel Negresco and Alain Ducasse’s Hôtel de Paris in Monte Carlo. He was first appointed Pastry Chef at the age of 22, and has worked in Michelin-rated restaurants such as l’Hostellerie du Vallon de Valrugues and the Mas du Langoustier. In 1996, he took on the post of Pastry Chef at the Hôtel de la Cité, while working on his Mastership exam, the Brevet de Maîtrise. This degree, involving studies in personnel management, law and educational psychology, allows Régis to teach his favourite subject, confectionery.

Corbières

The Corbières is one of the wildest areas of France with one of the lowest population densities. It is picturesque with wine growing areas alternating with garigue and mountainous countryside. It is located mainly in the Aude département and partly in the Pyrénées-Orientales département. The River Aude borders the Corbières to the west and north. To the south is the River Agly and to the east the the Mediterranean Sea. The name Corbières comes from "cor" a pre-Celtic word meaning "rock" and "berre" from the River Berre which runs through Durban. The eastern part of the Corbières with its Etangs, borders the the Mediterranean Sea and is called the Corbières maritimes. It has its own distinctive climate and characteristic vegetation known as thermomediterranean vegetation...


Minervois

A.O.C. Minervois

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

The foundation charter of the Benedictine Abbey of Sainte Marie de l'Orbieu dates from the end of the 8th century, even if another building probably existed on the site before the Carolingian period...
