  Specialities

The Seuil de Naurouze, aka Col de Naurouze, is a mountain pass in southern France. It is the watershed point identified by Pierre-Paul Riquet when he designed and built the Canal du Midi. Water falling on the western side of this point flows to the Atlantic Ocean and on the eastern side to the Mediterranean Sea. It is on the border of the department of Haute-Garonne and the department of the Aude.

In 1827, the heirs of Riquet built the Riquet Obelisk. The obelisk has a dedication: "To Pierre-Paul Riquet, Baron Bonrepos, author of the Two Seas Canal in Languedoc". It is erected near the site of the former octagonal holding tank, called the Bassin de Naurouze created during the building of the Canal du Midi. The flow of water from the Bassin de St. Ferreol joins the Canal du Midi at this point...

Cabardès

A.O.C. Cabardès

The Cabardès region is situated to the west of Languedoc and to the south of the central massif, a geologist's dream, balanced between east and west, the sun and the coolness, the heathland and the mountain. It is here that the winds cross. They bring the intense mediterranean heat necessary for southern "cépages" (grape types) such as syrah and grenache, and the cool atlantic humidity for the ocean "cépages": merlot, cabernet-sauvignon, cabernet-franc, cot and fer-servadou, to prosper. The vineyards and wines of Cabardès have been recognized as AOC since february 1999. The quality of the grapes, the wine-making, the blending of the "cépages" and the keeping of the wines has allowed us to obtain the best balance between fruit and structure, fullness and complexity, intensity and elegance. Cabardès assembles 30 châteaux and domaines over 500 productive hectares spread amongst 18 villages. 20000 hectolitres are produced each year,of which 60% are exported....

Vin de Pays d’Oc,
Vin de Pays de l’Aude

Vin de Pays d’Oc, Vin de Pays de l’Aude

Vin de Pays means 'country wine' to the French, but to outsiders it can mean New World with a French accent. These are the wines which the French authorities unreservedly allow to be labelled with the grape variety from which they were made. It is difficult to over-estimate the importance of this large and growing category of wines for the future of the French wine trade. The French themselves may have tended to see any Vin de Pays as distinctly inferior to any appellation contrôlée wine, whereas many of their customers abroad see the better Vins de Pays as good-value, user-friendly, sometimes high-quality non-conformist emissaries from the world's most revered wine producer....

Canal du Midi

The Canal du Midi is one of the greatest engineering achievements of the modern age, providing the model for the flowering of technology that led directly to the Industrial Revolution and the modern technological age. It represents a significant period in European history, that of the development of water transport as a result of mastery of hydraulic civil engineering. Mirepoix

Mirepoix

The little town of Mirepoix lies in south-west France in the department of the Ariège, the traditional name for the part of the Ariège that is home to Mirepoix being the Pays D’Olmes. This is a very lovely part of France, and includes some of the beautiful mountains of the Pyrénées. Mirepoix is truly a place where you will want to linger. There can be few pleasures greater than the simple delight of sitting under one of the shady canopies formed by the overhanging houses that surround the square, sipping a coffee or a long cool drink and watching the world go by. The numerous bistros and cafés offer a variety of treats ranging from delicious pastries and gateaux to three course meals and a glass or two of the locally produced wines. The character of Mirepoix is quite distinctive and the town oozes charm. Half timbered houses line the central square, with their upper storeys overhanging the walkways below. During its long history, Mirepoix was nearly destroyed twice, by both floods and fire, but has been rebuilt and is now considered to be one of France’s prettiest towns...
