The Prise d' Alzeau and the Mountain Canal in the very heart of the Montagne Noire, «the source of the Canal du Midi» provides an important supply of water. It wasn’t until the 17th century, when Pierre Paul Riquet identified and harnessed the power of the small mountain streams so that collectively they could be used to generate a supply of water to the Canal du Midi.

Thus Pierre Paul Riquet completed his greatest work, taking water from its source here in the Montagne Noire for the Canal du Midi in order to finally link the Atlantic and The Mediterranean Sea.

The Galaube dam is part of the water management system of the Montagne Noire near Carcassone in Southern France. Reservoirs at the Saint Ferréol, Lampy and Cammazes dams already hold more than 35 million cubic metres of water for use as drinking water, irrigation in the three departments of Aude, Haute-Garonne and Tarn as well as regulating water levels in the Canal du Midi...
The Montagne Noire is so called because of its sombre aspect when seen from afar, which results from its thick vegetation and its geographic location on the frontier between oceanic and Mediterranean climatic influences.

Walking through its secret forests and waterfalls, its panoramic view points, its lakes (Montagnès, Saint-Ferréol), and sites and historic villages (Hautpoul, Saissac, Abbaye Ecole Royale de Sorèze, Abbayes de Dourgne, bourgs médiévaux d'Escoussens, Aussillon le Vieux, Labruguière), you may feel that it would be more rightly called the Green & Blue Mountain; particularly once you have experienced the savoir faire of yesterday and today, (textiles and wool in Mazamet, copper in Durfort, la voûte de Vauban et la Rigole de Riquet aux Cammazes).

The "Reserve for Lampy" and the "Rigole de la Montagne" on the list of UNESCO's heritage! At the end of the eighteenth century at the time of the realization of the "Canal de la Robine" in Narbonne had been obliged to build an additional reservoir. The place Lampy was selected by a committee of experts in 1776 and construction was completed in 1782. The plans were designed by "Garripuy" the engineer. The dam "Lampy" is 126 meters long, the base is anchored in a granite rock of 42 m. The maximum height is 16 m. Ten runners form a natural wall screen. The wall is thicker than 5 m at his coronation. The storage volume is 2.665 million m3

Cabardès

A.O.C. Cabardès

The Cabardès region is situated to the west of Languedoc and to the south of the central massif, a geologist's dream, balanced between east and west, the sun and the coolness, the heathland and the mountain. It is here that the winds cross. They bring the intense mediterranean heat necessary for southern "cépages" (grape types) such as syrah and grenache, and the cool atlantic humidity for the ocean "cépages": merlot, cabernet-sauvignon, cabernet-franc, cot and fer-servadou, to prosper. The vineyards and wines of Cabardès have been recognized as AOC since february 1999. The quality of the grapes, the wine-making, the blending of the "cépages" and the keeping of the wines has allowed us to obtain the best balance between fruit and structure, fullness and complexity, intensity and elegance. Cabardès assembles 30 châteaux and domaines over 500 productive hectares spread amongst 18 villages. 20000 hectolitres are produced each year,of which 60% are exported....

Vin de Pays d’Oc,
Vin de Pays de l’Aude

Vin de Pays d’Oc, Vin de Pays de l’Aude

Vin de Pays means 'country wine' to the French, but to outsiders it can mean New World with a French accent. These are the wines which the French authorities unreservedly allow to be labelled with the grape variety from which they were made. It is difficult to over-estimate the importance of this large and growing category of wines for the future of the French wine trade. The French themselves may have tended to see any Vin de Pays as distinctly inferior to any appellation contrôlée wine, whereas many of their customers abroad see the better Vins de Pays as good-value, user-friendly, sometimes high-quality non-conformist emissaries from the world's most revered wine producer....
