This walk will introduce you to the Pas de Mont Sarrat where remarkable traces of cart wheels are printed in limestone. At the time this Roman road was used for routing Pradelles ice packs to the plain.

At the Montagne Noire are many different walks, it is important to carry a compass, water, some food and tissues, and wear good walking shoes, a hat or cap and perhaps even carry a good walking stick. This is rough nature. There is no horeca, or toilets or even benches. These walks go over ancient paths, perhaps even millennia old, because also in prehistory, men travelled on these paths through the mountains.

Apart from nature, also history is an important goal for many people's holiday. And apart from nature and history, the mountains also have several beautiful lakes offering refreshment on a hot day. One of these lakes is Lac Birotos in Pradelles-Cabardès, with a nice little beach and clear water...
 
Pradelles-Cabardès is the highest village in the Montagne Noire, since it encompasses within its territory the Pic de Nore (1211 m), the highest point of the massif. Built on a mountainside overlooking a beautiful Pradelles agricultural plateau offering groves mosaic accessible by a pleasant walking paths. The lake close to the village offers a pleasant environment where swimming and fishing are possible. The XVIII and XIX century are the hallmark of Pradelles in the manufacture of natural ice. Snow stored in underground silos by villagers and delivered harnessed allowed convoys of bold and enterprising men to create a real business, that of ice of Montagne Noire; one pound in Narbonne, Carcassonne, Mazamet, is found even in Montauban. Under the shade of a beech or just at the edge of one of these metalled roads used always, the old "coolers" built, typical of a local mountain architecture, will amaze you when you discover them. They tell the story of these "ice adventurers" who believed the economic development of their village .... In the center a church with its Romanesque tower, well restored attracted by the beauty of its octagonal bell tower, its beautiful slate roof and sometimes by musical notes of its carillon! When we step in Pradelles Cabardès, you really want it extends...

Pic de Nore is the highest mountain in the Montagne Noire range. It is still just only over 1200 meters high but boosts a moderate climate in summer and mostly a chilling climate in winter (comparable to Scotland: heather, grass, stunted trees). What it does have to offer though and makes the climb worth it are spectacular views to the South over to the Pyrenees, which are naturally covered by snow at this time of year. Views to the north are the greater flatlands of Albi and further north as far as the Earth curvature will permit.

The Cabardès region is situated to the west of Languedoc and to the south of the central massif, a geologist's dream, balanced between east and west, the sun and the coolness, the heathland and the mountain. It is here that the winds cross. They bring the intense mediterranean heat necessary for southern "cépages" (grape types) such as syrah and grenache, and the cool atlantic humidity for the ocean "cépages": merlot, cabernet-sauvignon, cabernet-franc, cot and fer-servadou, to prosper. The vineyards and wines of Cabardès have been recognized as AOC since february 1999. The quality of the grapes, the wine-making, the blending of the "cépages" and the keeping of the wines has allowed us to obtain the best balance between fruit and structure, fullness and complexity, intensity and elegance. Cabardès assembles 30 châteaux and domaines over 500 productive hectares spread amongst 18 villages. 20000 hectolitres are produced each year,of which 60% are exported....


Minervois

A.O.C. Minervois

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

Hautpoul, the historic birthplace of Mazamet, ancient castrum (fortified village) perched on a rocky outcrop, served as a retreat during the period of the Inquisition. It was also one of the places of residence of the Cathar Archbishop of the diocese of Albi in the 13th century. This Medieval village is one of the rare vestiges of the Cathar time to be situated on the Tarn side of the Montagne Noire...
