Le Labyrinthe des Vignes is the first of its type in the world.

Just a stone's throw from the Wine Bar and Animal Farm young and old can spend an absorbing part of the afternoon seeking the quickest way to exit the maze.

A perfect way to work up an appetite (and a thirst) before repairing to the Wine Bar for a refreshing drink and a taste of locally-produced meats grilled over vine cuttings...

Le domaine de Bouriette is a winery in the Aude departement of the Languedoc about 10 kms from the citadel of Carcassonne.

The 30 hectare estate produces red, rosé and white wines using principally the grape varieties Chardonnay, Cabernet Sauvignon and Syrah which are marketed under the estate's 'Labyrinth' label.

Malepère

A.O.C. Malepère

The Malepère region was awarded AOC status on May 2nd 2007. It is a hilly area south-west of the city of Carcassonne which is included in the appellation along with 31 other towns and villages. Although the area claims a great history of wine making it was in the 1970’s that the vineyards began to be replanted and VDQS status was granted. VDQS is the intermediary wine designation between Vin de Pays and AOC and is a testing ground for would-be AOC’s to prove that wines from all the producers share a common personality before they can be awarded full AOC status. Although an obscure region the Malepère is well worth a visit and offers a very different terrain to the more recognizable Languedoc appellations. There are many interesting medieval circular villages to visit. They were built this way to form ramparts to act as protection for the inhabitants. The Cathar religion was strong here and the area is immersed in history and folklore...

Limoux

A.O.C. Limoux

Limoux is best known for its sparkling wine, Blanquette de Limoux. This is reputed to be the oldest sparkling wine in France and dates back to 1531 when Benedictine monks from Saint Hilaire Abbey discovered that the wine they had laid down had fermented and formed bubbles. This was the beginning of Limoux’s bubbly - the Blanquette de Limoux which was the first AOC to be created in the Languedoc area. The process (the locals say) was stolen by Dom Perignon who went on to create ‘champagne‘. however the Limoux sparkling wine is a very high quality champagne substitute and Crémant, which was developed in 1990, has a top class reputation. Now a prestigious event attracting buyers from all over the world, “Toques & Clochers” puts up for auction the most promising barrels of AOC Limoux. A share of the proceeds are then used to finance the renovation of bell towers in surrounding villages. Every year the auction is hosted by one of France’s great chefs popularly referred to as a “Toques”, the traditional white chef’s hat....
