30 km away from Carcassonne, the world’s most beautiful medieval city, nestled in the heart of the Cathars country with its castles, you will be greeted at a charming hotel, once the site of an ancient bishop’s palace.The Hostellerie de l’Eveche, with its 30 comfortable rooms, sits on a park of three hectares. Neighboring our rooms, you will enjoy the ruins of the roman abbey, with the Aude River running alongside.

L’Hostellerie de l’Eveche will also provide you with a large variety of "rural" gourmet products ("produits du terroir"), mostly homemade on our family estate. You will have the opportunity to savour those products from our range of standard to gourmet’s menus. Our large and beautiful historic rooms, the largest one measuring 100 square meters with 5 meters high ceilings can accommodate banquets, seminars, group or business meals. And you will also discover, within walking distance and surrounded by the enchanting reaches of the Pyrenees, the little town of Alet, which will delight you with its medieval streets and its mansions with half timberings.
  Specialities

The old Episcopal palace of Alet-les-Bains sits on the Aude River banks between Limoux and Couiza. It is 33 km away from Carcassonne, an hour away from the sea and another hour from the ski resorts.

Alet-les-Bains has a rich architectural and historic heritage. As a result, are considered part of the national landmark the following buildings: the abbey, the 12th century cathedral, the 14th century Chapter House, the Episcopal Palace, the Medieval town and many 12th and 14th century Colombage mansions.

Christian Limouzy, owner and chef, who graduated from the Ecole Hotelliere des Pyrenees in Toulouse, actively promotes the regional cuisine as well as family recipes. The wines being proposed with the meals are exclusively from the region, in corked bottles. The restaurant works but thinks about reservation....

Limoux

A.O.C. Limoux

Limoux is best known for its sparkling wine, Blanquette de Limoux. This is reputed to be the oldest sparkling wine in France and dates back to 1531 when Benedictine monks from Saint Hilaire Abbey discovered that the wine they had laid down had fermented and formed bubbles. This was the beginning of Limoux’s bubbly - the Blanquette de Limoux which was the first AOC to be created in the Languedoc area. The process (the locals say) was stolen by Dom Perignon who went on to create ‘champagne‘. however the Limoux sparkling wine is a very high quality champagne substitute and Crémant, which was developed in 1990, has a top class reputation. Now a prestigious event attracting buyers from all over the world, “Toques & Clochers” puts up for auction the most promising barrels of AOC Limoux. A share of the proceeds are then used to finance the renovation of bell towers in surrounding villages. Every year the auction is hosted by one of France’s great chefs popularly referred to as a “Toques”, the traditional white chef’s hat....

History tells us that Blanquette de Limoux, the world's first sparkling wine, dates as far back as 1531. At the time, the monks of the Benedictine abbey of Saint-Hilaire, near Limoux, were producing a somewhat unusual white wine in their cellars. Inside its glass flask, with a cork top - very rare for wines at this time - it acquired a natural sparkle. This was the forefather of the brut which is tasted today at the world's most prestigious tables. Since they first started cultivating vines, the growers of Limoux have aimed at maintaining the originality of the Blanquette de Limoux growth and developing its quality. The region's surrounding hills protect it from the extremes of the Mediterranean and Atlantic climates, with the area enjoying a microclimate particularly suitable for making quality white wine. The vines classified in the appellation are always planted at the top of southern-facing slopes, giving the best exposure. The soil here is shallow and sparse, full of chalk and stone....

South-west of Quillan the River Aude and its tributaries have carved magnificent ravines and gorges in the landscape, and over the course of thousands of years have created the fine limestone cliff scenery that we enjoy today. Among the highlights, the road heading south from Quillan to Axat (the D117) passes through the deep Gorges de Pierre-Lys, with cliffs either side of the road stretching to 700 metres in height. From Quillan to Axat; Impressive passage between the cliffs. The "Trou du Curé" recalls the memory of Father Armand Felix, vicar of St Martin Lys, who drilled with the help of his parishioners the first tunnel, a dozen yards long, in the 18th century....

Puivert Castle, locally known as Château de Puivert, lies near the village with the same name, west of the town of Quillan in the Languedoc-Roussillion region in France. Of all the Cathares castles, Puivert Castle certainly is one of the best preserved. It was built in the 14th century. With its 35 meters high keep in which four splendid rooms are superimposed, its 6 towers incorporated in its enclosure wall, this castle dominates the old glacial lake of Puivert below. One of the rooms in the keep has very nice carvings of 8 characters with medieval musical instruments on its walls. You can climb to the top of the keep which offers a great view on the Quercorb plain to north, to the west of Montségur Castle with the summits of the Pyrenees behind it and to the east of the peak of Bugarach..

Arques is the village which saw the birth of Déodat Roché (1877-1978), the historian of Catharism. Deodat Roche, founder of the Cahiers d'Etudes Cathares and a twentieth-century magistrate of Limoux and Carcassonne who was removed from his position by the Vichy government for his interest in religion and spirituality, wanted to lay bare to his contemporaries the light which the Cathars had tried to reveal to the medieval world. A self-proclaimed neo-Cathar, Roche believed deeply in the need to uncover the true history of the Cathars, which had been obscured by an intolerant medieval Church. His house is the location for a permanent exhibition devoted to Catharism and its interpretations....
