Hélène, Didier and Thibaut Vordy welcome you. We are winegrowers and are pleased that you visit our domain...

A small vineyard of 22 hectares (about 45 acres) in the Minervois region of the Languedoc-Roussillon appellation, this family-run operation creates numerous types of wines from some older vines, including some 100+ year old Carignan. The organically grown grapes are harvested by hand. Their wines are full of fruit aromas and flavors and some of the reds will cellar well for up to 10 or more years.

Carignan of more than 100 years of age, Grenache roots dipping in mineral soil, the must have Syrah, Roussanne and Grenache Blanc rich from the freshness of our hills and last but not least the Mourvèdre growing in warmer areas.

Minervois

A.O.C. Minervois

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

There are thousands of grape varieties contributing to a vast array of different wine styles with each variety having its own distinct flavours and characteristics. Varieties can be made uniquely to make a wine, in whch case the wine is known as a varietal, or collectively with other varities, when the wine is known as a blend. The soils and ‘terroirs’ in the Aude area are very varied, from Schist, Sandstone, Marl, Gravel, Pebbles, Limestone, to Granit and Alluvial soil; thus making many marvelous and different styles of wine. Also in this massive area are many different grape varieties, the reds include Carignon, Cinsault, Granache Noir, Syrah, Mourvèdre, Cabernet Franc, and Merlot. The whites, Chardonnay, Granache blanc, Picpoul, Marsanne, Roussanne, Vermantino, Mauzac, Chenin and Clairette...

We offer four fixed-price menus between 19 and 45 euros as well as a variety of dishes à la carte, accompanied by a selection of wines from the Minervois vineyards (14-34 euros)....

During the months of July and August, Le Maquis is a holiday unique and joyful, often very lively at night, where there is a very friendly atmosphere. You can come alone (e), with friends or family, and be almost certain to leave pockets full address and cool memories. The camping area is spread over two hectares, dotted with trees and shrubs, all sites are shaded. It was concluded to be safe from the curiosity of the herd. Adjoining the site, the area houses the restaurant Feast farmer, wooden tables, a tent, a small stage, a bibliography barter a tree to listen to a selection of sound Maquis emissions. Using dioramas (original figurines presented in various scenes), the museum tells the story of the tragic saga of the Occitan Cathars. In the 13th century, the catholic princes, spurred on by Pope Innocent III, decided to put an end to Cathar influence in the provinces of Languedoc, Simon de Montfort came to impose the law and the catholic faith in Languedoc by force and fire. The local barons and knights then took up arms to defend their land, their faith and their culture. Following many years of combat, they lost their independence and were forced, in humiliation, to witness the martyrdom of the Cathars under their protection, who were burnt at the stake on enormous pyres...
