Here, in the heart of the Minervois, the strength of the terroir grows to humility. It is on these arid lands that Jean-Luc Fabrié, passionate winegrower, runs his estate.

His philosophy could be summarized in a few words: "To be a vine grower is to be careful, curious. "To be a vine-grower is to be inventive in tradition, bold with reflection, obstinate with fantasy For the vine-grower, the vine is a battle between matter, elements, biology and the hand of man.This matter, It is the earth, the elements are air, sun, wind, biology, it is the vine, the wine. "

The estate is cultivated on 40 hectares, in parcels where are distributed Syrah, Grenache, Mourvèdre, Cinsault, Roussane, Chardonnay, old Carignan. Very close to nature, he leads his field in organic farming, expressing at best all the typicality of the vintage.

Meticulous and regular checks enable the prevention of diseases. All the maintenance work on the plots is done by hand: short cut to one eye, disbudding, green harvesting, leaf stripping.

  Specialties

Part of the five main soils of the Minervois, our vineyard is positioned on two zones: geological and climatic Trausse! In the heart of the Minervois, the terraces of siliceous pebbles extend around the river Argent-double and its tributary, the Ognon, both descended from the Montagne Noire. The vines are sheltered from oceanic influences and receive mainly the Mediterranean rains. The low precipitation and the dry climate give us the usual landscape of fragrant scrubland.

Félines, "Minervois La Livinière". Present in the Minervois appellation, this area is a geoclimatic zone apart. Arid sector, subject to strong water deficiencies in summer, it enjoys in the night of the fresh currents brought by the Causse to balance the diurnal heats. The soils are composed of compact limestones and calcareous marls.

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

There are thousands of grape varieties contributing to a vast array of different wine styles with each variety having its own distinct flavours and characteristics. Varieties can be made uniquely to make a wine, in whch case the wine is known as a varietal, or collectively with other varities, when the wine is known as a blend. The soils and ‘terroirs’ in the Aude area are very varied, from Schist, Sandstone, Marl, Gravel, Pebbles, Limestone, to Granit and Alluvial soil; thus making many marvelous and different styles of wine. Also in this massive area are many different grape varieties, the reds include Carignon, Cinsault, Granache Noir, Syrah, Mourvèdre, Cabernet Franc, and Merlot. The whites, Chardonnay, Granache blanc, Picpoul, Marsanne, Roussanne, Vermantino, Mauzac, Chenin and Clairette...

They serve well constructed meals, menus with choices & a la carte served with very reasonabley priced local wines. The warm welcome of the bosses, the decor classy and sober, daily menu renewed every day, garden products ... and the wine list at very reasonable rates. The gourmet menu (starter, main dish and dessert) is a feast! Opportunity to purchase wines from areas at the end of the meal. An address that we will refile word of mouth....

Located just down the hill on the main street, inside this is the local bar, while outside is a gathering place for tourists. A morning coffee can be fun. Buy the pastries across the street at the boulangerie, then order coffee. There's no problem with eating breakfast that you've purchased elsewhere, because the Grande Fontaine doesn't sell pasteries. An omelet and salad at noon can be very enjoyable and inexpensive, and full meals are available both at noon and in the evening. Reservations not normally necessary...

One of my favourite places in Caunes Minervois is La Cantine du Cure in the shadow of the Abbey. There is always a friendly face to welcome you and a little music keeping you company in the background. The staff are friendly and helpful and attentive and will assist you with your choice of fare - there is normally a choice of 3 or 4 tapas for €5 and perhaps 4 plats du jour (plate of the day)for €10 and normally ice cream for dessert.....
