We, craftsmen winemakers Dominic Xavier Mestre & Rémon originating in the Corbières: We have chosen to live our working winemakers. We define ourselves as artisans of wine as we cultivate our vineyards and make our wines with passion, rigor and creativity.

By visiting us in our cellar, otherwise in shows, fairs and exhibitions in which we participate and of course in all restaurants, wine shops and other distributors who help us with their professionalism to distribute our wines. Visit them, they will talk to you and make you appreciate them.

We get closer to the organic farming by the way we protect our vines. A maximum of prophylactic measures (plowing, trellising, épamprages, thinning, éfruitage, ...) and a good visual monitoring of our vineyards allows us to minimize plant protection.

Viticulture 'rational' is fraught with administrative documents and is not necessarily synonymous with treatment limitation, it induces the written traceability. We define ourselves as winegrowers ''reasonable'' and invite you to share our wilderness away from industrial pollution.

The situation
At the heart of the Corbières, in the triangle Carcassonne, Narbonne, Perpignan, our area covers the terroirs of Boutenac and Hautes-Corbières, between the Abbey of Lagrasse, Fontfroide and that of the castle of Villerouge Termenès.

The terroir
The rugged landscape in the heart of the Corbières offers quantities of clay and limestone soils, stony and various exhibitions. With an altitude of about 200 meter the slow maturation of our grapes is spread between the vines.

Our vines
They extend to the towns to St Laurent de la Cabrerisse, Jonquières and Talairan, surrounded by wild scrub with lavender scents, rosemary, thyme ... The area of vines cultivated in 2014 was 22 hectares including 20 of Appellation Origine Contrôlée and 2.00 of Vin de Pays.

The winery
Built entirely out of our hands, it combines modern materials such as stainless steel and traditional such as stone, brick, wood, iron, terracotta, wine ... Each tank is thermally regulated.

Winemaking
Grapes, sorted by the pickers in the vineyard are picked before fermentation. Temperatures are perfectly mastered in our small concrete tanks.

The Corbières is one of the wildest areas of France with one of the lowest population densities. It is picturesque with wine growing areas alternating with garigue and mountainous countryside. It is located mainly in the Aude département and partly in the Pyrénées-Orientales département. The River Aude borders the Corbières to the west and north. To the south is the River Agly and to the east the the Mediterranean Sea. The name Corbières comes from "cor" a pre-Celtic word meaning "rock" and "berre" from the River Berre which runs through Durban. The eastern part of the Corbières with its Etangs, borders the the Mediterranean Sea and is called the Corbières maritimes. It has its own distinctive climate and characteristic vegetation known as thermomediterranean vegetation...

Hiking Talairan, fortified village. You can walk through the vineyards at the edge of the cliffs and the dried up river Nielle. You can also admire the clear waters of Gourg Goutonnier... > Leave the village on the D323. You’ll walk past a basin (known as the “lavoir à pétales”, the petal washtub), extremely pleasant during the warm summer months. Take the chemin de la Croisette which will take you to the Notre-Dame-de-l’Ere chapel. Follow for about 600 m, before climbing the Buffanel on a small path to the left through the garrigue on the edge of the superb Gorges of the Nielle stream, twisting and turning 100 m below. Walk up along the gorges on a small ridge path, and continue alongside a fenced vineyard...
