1531. On that date, for the first time ever, a wine began to sparkle. Since winemakers perpetuated year after year for nearly five centuries tradition. At Domaine de Peyret, the work of Vine and Wine is a family business for six generations: today we are the heirs of a know-how that has been passed for over 150 years.
Domaine de Peyret - Cepie
Peyret... original:
The origins of the name "Peyret" back to the XX century. Indeed, it was after much research at the Mairie de Cépie of our town, and also the departmental archives of Carcassonne, the name of Peyret appears in 1798; this is called "little Pierre, said Peyret" which gave its name to the Domaine...

Since 1993, the area consists of 3 people grouped in Groupement Agricole d'Exploitation en Commun (G.A.E.C.): consisting by Genevieve and Pierre Andrieu and their nephew Thierry Gauché. In 1975, Pierre Andrieu, with the help of his wife Genevieve, resumes, after his great-grandfather Peter, his grandfather Charles and his father John, the family farm at the age of 21, after studies in agriculture and oenology. Eleven years later, in 1986, they decided to make the entire production of winemaking by themselves . They then engage in the production and marketing of Blanquette de Limoux and local wines.

In 1993, Thierry Gauché, nephew of Pierre and Geneviève Andrieu, after his studies in viticulture and oenology, decided to join in a G.A.E.C. He brings some vines and land that gradually will be planted with noble varieties. In 12 years, the area passes 20 and 28 Ha in order to maintain, despite everything, the "family" nature of the operating systems that provide the greatest care every step of the production process.

Agriculture raisonée:
In a growing concern of environmental, Genevieve Pierre and Thierry decided to switch to farming in 2005, and thus follow national specifications which assures consumers an optimal traceability and also allows power if needed is there to phytosanitary treatments on the vine.

Blanquette de Limoux

Blanquette de Limoux, Crémant de Limoux, Blanquette Méthode Ancestrale

History tells us that Blanquette de Limoux, the world's first sparkling wine, dates as far back as 1531. At the time, the monks of the Benedictine abbey of Saint-Hilaire, near Limoux, were producing a somewhat unusual white wine in their cellars. Inside its glass flask, with a cork top - very rare for wines at this time - it acquired a natural sparkle. This was the forefather of the brut which is tasted today at the world's most prestigious tables. Since they first started cultivating vines, the growers of Limoux have aimed at maintaining the originality of the Blanquette de Limoux growth and developing its quality. The region's surrounding hills protect it from the extremes of the Mediterranean and Atlantic climates, with the area enjoying a microclimate particularly suitable for making quality white wine. The vines classified in the appellation are always planted at the top of southern-facing slopes, giving the best exposure. The soil here is shallow and sparse, full of chalk and stone....

Malepère

A.O.C. Malepère

The Malepère region was awarded AOC status on May 2nd 2007. It is a hilly area south-west of the city of Carcassonne which is included in the appellation along with 31 other towns and villages. Although the area claims a great history of wine making it was in the 1970’s that the vineyards began to be replanted and VDQS status was granted. VDQS is the intermediary wine designation between Vin de Pays and AOC and is a testing ground for would-be AOC’s to prove that wines from all the producers share a common personality before they can be awarded full AOC status. Although an obscure region the Malepère is well worth a visit and offers a very different terrain to the more recognizable Languedoc appellations. There are many interesting medieval circular villages to visit. They were built this way to form ramparts to act as protection for the inhabitants. The Cathar religion was strong here and the area is immersed in history and folklore...
