Acquired by my family in 1697, the estate that used to be an auberge has always provided for the production of the Fitou wine. I went with my parents full time in 1996. For over 10 years with my partner Ludovic we have been working the vineyard without a weed killer. We respect our country as much as possible to try and guarantee a future for our children. The work of the cellar is done in the same spirit with a minimum of input, so drinking a little should not harm the head or the most vulnerable stomach.

The vineyards of the Languedoc extend over a vast area in the south of France. From the Mediterranean coast of Leucate, in the west to Nimes and the Camargue, the east, it covers the foothills of the Cévennes to the doors of Carcassonne. Under the decisive influence of the Mediterranean climate and the Tramontana, it contains four producing regions with the Languedoc wines - Aude, Gard, Eastern Pyrenees and Hérault - they offering a wide range of red, white or rosé.

Today, AOP Languedoc has 36 appellations and denominations, each with their own specificity. The AOP Fitou represents one of the most famous names in the region. The wines of Fitou come from the blending of four grape varieties, which gives the talent of every winemaker the freedom to develop his blends as he wants and that lead to powerful wines that are never equal ....

  AOP
Fitou wines are made from four major grape varieties: Carignan, Grenache, Mourvèdre and Syrah. The blend is at the discretion of every winegrower who grows his vines between the Mediterranean and the Corbières massif in the Aude. The Mediterranean climate is largely due to the character of the Fitou wine, which enjoys exceptional sunshine, refreshed by the Tramontane, which brings its vines out of the sea.

Muscat de Rivesaltes
The kingdom of Muscat Rivesaltes extends between Corbières in the north, the Mediterranean Sea in the east, the Pyrenees in the south and Canigou in the west. This pale yellow wine with golden highlights is appreciated for its fruity sweetness reminiscent of citrus fruit, candied fruit and the honey-like bouquet of garrigue. His vines also benefit from the Mediterranean sun and the omnipresent Tramontane to produce a popular wine as an aperitif that blends beautifully with foie gras and appetizers.

Vin de France
Les vins de France are wines without geographical indication, which in no way means a sign of lesser quality. This name depends on the envelope of the cuvée. Our wines from France come from the same terroire as our other wines, but the strict demarcation of the geographical area does not entitle them to the AOP. However, they are powerful wines that do not deny their Mediterranean origin and that make the happiness of all tables in France and elsewhere.

The first "Appellation d'Origine Contrôlée" wine of Languedoc-Roussillon, is only produced in nine small communal areas: FITOU, Caves, Treilles, Leucate and La Palme, which are all beside the sea, between Narbonne and Perpignan, and Cascastel, Paziols, Tuchan, and Villeneuve in the Corbières-Massif. Documents going back as far as Philip Augustus, Louis XIII and Louis XIV bear witness to the long-standing reputation of Fitou wines.Rabelais particularly appreciated "vin de Palme" which now has the "Appellation d'Origine Contrôlée Fitou" label. he vineyards in Fitou are set out on shaly and argilocalcareous soils with exceptional exposure to the sun. The countryside, whose relief consists in parts of hills and slopes and in others of plateaux, has the advantage of a particularly dry climate and is often swept by a high wind, the "Cers"...

Muscat de Rivesaltes is an appellation for the historic vins doux naturels from a relatively large area of Roussillon, in southern France, covering a total of 99 communes, and the majority of the Pyrenees-Orientales administrative departement. It is the largest single sweet wine appellation in France. Muscat de Rivesaltes wines are made predominantly from Muscat Blanc a Petit Grains and Muscat d'Alexandrie in varying ratios, according to the style desired by the individual producer. Muscat Blanc a Petits Grains is used to bring aromas of exotic and citrus fruits while Muscat d'Alexandrie brings a deeper bouquet of white flowers and ripe stone fruit. Collectively the wines show aromas of peach, lemon, mango and occasionally fresher, herbaceous notes like mint. These aromas all change with ageing, (which take place mostly in the bottle to preserve the fresher aromas) and the wines take on aromas of honey and baked stone fruits...

The village itself has dramatically changed last years, as the wines from the Fitou appellation got a better name, and more and more people from the North of France and even Germany, Switzerland or England, bought the houses in the region known for its beauty, closeness to the Mediterranean Sea and a nice climate. Several tiny town houses in Fitou have been nicely restored. You may see them walking through the village up to the castle. The castle’s museum, a slightly home made, may be attractive to visit by small children. They should not look only too close at the torture instruments. Still, they might like everyday court scenes and the alchemist’s workshop.....
