Domaine de la Maurette is located 350m above sea level at the foot of Cardou in the heart of Cathar country. Our ten hectares of vineyards, facing south belonging to the municipalities Cassaignes, Coustaussa and Serres.

Culture raisonnée* and amendement organique** on the whole vineyard. Yields not exceeding 40 hl / ha allow us to obtain quality wines and very natural. Harvesting is done manually and the vinification is done with indigenous yeasts..

The soils are calcareous clay. The surrounding vegetation provided of scrubland and pine plants, demonstrates the proximity of the mountain and promotes ecosystem.

*Culture raisonnée: based on respect for the environment by using less aggressive products for humans and nature.

**Amendement organique: from the composting plant (cake and pulp) and manure.

  Blanquette de Limoux was created in 1531 in the cellars of the Benedictine Saint Hilaire Abbey when a monk discovered that the wine that he had bottled and carefully corked formed bubbles, after a second fermentation. The first sparkling wine in the world had just been invented in this splendid abbey. Historians have found texts dating from that period which mention "flascons de Blanquette" and during the XVII century, the Britains fell under the charm too, the English author George Farquhar wrote "Brut sparkles like the lively remarks of a man of wit". Defined since 1929, the Limoux zone of production was the first to create a controlled label of origin in the Languedoc with Blanquette and Blanquette Méthode Ancestrale in 1938, both of them are elaborated with the traditional white grape variety of Limoux: Mauzac. More recently, the decree published in 1990 added a new appellation: Crémant de Limoux and following a recent change at the decret, Cremant de Limoux is now produce with Chardonnay and Chenin. We can also add Mauzac and/or Pinot noir.

We realize that protecting the landscape is very important as well as respecting the biological diversity and we always tried to minimize the treatments. For each of our vines we apply the method of reasoned agriculture by observing the vineyard every day and with the help of a professional technician we know how to use treatments only if it’s really necessary. On the other hand we choose only products that help in protecting the soil: for example we only use organic fertilizer.

History tells us that Blanquette de Limoux, the world's first sparkling wine, dates as far back as 1531. At the time, the monks of the Benedictine abbey of Saint-Hilaire, near Limoux, were producing a somewhat unusual white wine in their cellars. Inside its glass flask, with a cork top - very rare for wines at this time - it acquired a natural sparkle. This was the forefather of the brut which is tasted today at the world's most prestigious tables. Since they first started cultivating vines, the growers of Limoux have aimed at maintaining the originality of the Blanquette de Limoux growth and developing its quality. The region's surrounding hills protect it from the extremes of the Mediterranean and Atlantic climates, with the area enjoying a microclimate particularly suitable for making quality white wine. The vines classified in the appellation are always planted at the top of southern-facing slopes, giving the best exposure. The soil here is shallow and sparse, full of chalk and stone....

  At Sougraigne on the Domaine de l'Eau Salée, the Sals gushes forth, a salt spring with up to 60g of salt per litre, and which historically has attracted many protagonists: glass makers, jet miners, charcoal burners, woodcutters, shepherds, pedlars and of course, salt smugglers and the customs officers on their heels. La Source Salée, the salt water source at the heart of the Domaine, a source of salmon-pink salt water gives birth to the river Sals. The salinity varies with the seasons. In the time of the unpopular Gabelle (salt tax), this source was the origin of a vigorous salt smuggling activity. The former guard house close to the source remains as a silent witness to this troubled period....

Arques is the village which saw the birth of Déodat Roché (1877-1978), the historian of Catharism. Deodat Roche, founder of the Cahiers d'Etudes Cathares and a twentieth-century magistrate of Limoux and Carcassonne who was removed from his position by the Vichy government for his interest in religion and spirituality, wanted to lay bare to his contemporaries the light which the Cathars had tried to reveal to the medieval world. A self-proclaimed neo-Cathar, Roche believed deeply in the need to uncover the true history of the Cathars, which had been obscured by an intolerant medieval Church. His house is the location for a permanent exhibition devoted to Catharism and its interpretations....

This listed 16th century chateau is located on extensive grounds on the banks of the River Aude. The ancient fortress-turned-hotel subtly blends medieval tradition with modern confort - and it has an excellent restaurant too (it is important that you reserve a table in advance). The house was built by Jean de Joyeuse, first Governor of Narbonne and Lieutenant General in Languedoc, between 1540 and 1550, and his son, Guillaume III assumed the job of completing this magnificant chateau after he died. With a beautiful courtyard where one can dine in the summer months, the castle is a very special place to stay. With a swimming pool and tennis court, the hotel is a perfect base to combine relaxation with good food. Close to Cathares and 30 km to Carcassonne, there many cathedrals and historic monuments to visit. The Chateau does not have an elevator, so if you have a problem with stairs this may not be the best choice for you....
