Having crossed the threshold, as you remove your coat, take care to remove your watch as well. There is no longer any rush. We are now on vineyard time. It is now the vine, along with the climate, which decides.

For some time now, we have synchronized our internal clocks with those of the plants. Having learned that fighting, forcing and bending are useless; we have instead dedicated our energy to observing, listening, breathing and maybe even understanding.

We invite your senses to come sample this rhythm of nature: the vine and its fragrances, the history of the varietal, a charming cabin in a vineyard setting. Here you can experience the wine, free from rules governing its making or its tasting.

Our ancestors were winegrowers, our great-grandfather a barrel maker, our grandfather a wine broker… Indeed, we have approached wine from all angles! And, the essential is the lovely grape that we seek to draw out in every glass. The grape is where it all happens.

 In the wine storehouse, where each vintage reveals a unique personality, we search tirelessly for the perfect combination that will accentuate the grape, as it is, unique to its particular year..

  Specialties

In culture, we are listening to the rhythms of nature. Winter plowing followed by pruning, then attaching twigs to trellises, disbudding, care of the plant to protect it from rigors, rare, moisture! For a long time we have been bowing to the demands of organic certification, strangely the vineyard always summons us when the complicated forms remember us! Nevertheless, taking care of the vineyard according to the rules of organic farming, it was relevant to let you know! All our production is worked in organic farming, no weed killer, no treatment of mildew, a fight mainly focused on insects. It seems that we have gained acidity. What's more pleasant for a land of sunshine.

Backed by the Montagne Noire massif, our vineyards rest on an amphitheater facing the Mediterranean. The variety of the soils is immense and, rarity on a single field, pebbles mix with sand, sandstone and limestone. 35 hectares of vines are located at an average altitude of 127 m, composed of sands at the foot of the Montagne Noire, clay-limestone and serious deployed further around the village and beyond, on the plateau of Peyriac. In AOP Minervois we grow grenache, carignan, cinsault, syrah and mourvèdre, in country wines, merlot, cabernet franc, sauvignon and marselan.

Of course we apply ourselves to winemaking but the best part of the wine is made in the vineyard, with vines that feed on living soil through plowing and amendments. To do this job, we love wine, but more is the land we love. The smell of freshly turned earth is already a pleasure, even an incomparable enjoyment! To dig the earth, the smell of cut grass! Imagine 1.5 ha of Grenache and Cinsault mixed, an old vine (planted in 1981, above the village, surrounded by pines and oaks.) The soil is sandy, its limestone relief outcrops. Love to walk around, the environment is bucolic, there are two cabins, asparagus and dwarf irises...

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

There are thousands of grape varieties contributing to a vast array of different wine styles with each variety having its own distinct flavours and characteristics. Varieties can be made uniquely to make a wine, in whch case the wine is known as a varietal, or collectively with other varities, when the wine is known as a blend. The soils and ‘terroirs’ in the Aude area are very varied, from Schist, Sandstone, Marl, Gravel, Pebbles, Limestone, to Granit and Alluvial soil; thus making many marvelous and different styles of wine. Also in this massive area are many different grape varieties, the reds include Carignon, Cinsault, Granache Noir, Syrah, Mourvèdre, Cabernet Franc, and Merlot. The whites, Chardonnay, Granache blanc, Picpoul, Marsanne, Roussanne, Vermantino, Mauzac, Chenin and Clairette...

They serve well constructed meals, menus with choices & a la carte served with very reasonabley priced local wines. The warm welcome of the bosses, the decor classy and sober, daily menu renewed every day, garden products ... and the wine list at very reasonable rates. The gourmet menu (starter, main dish and dessert) is a feast! Opportunity to purchase wines from areas at the end of the meal. An address that we will refile word of mouth....

Located just down the hill on the main street, inside this is the local bar, while outside is a gathering place for tourists. A morning coffee can be fun. Buy the pastries across the street at the boulangerie, then order coffee. There's no problem with eating breakfast that you've purchased elsewhere, because the Grande Fontaine doesn't sell pasteries. An omelet and salad at noon can be very enjoyable and inexpensive, and full meals are available both at noon and in the evening. Reservations not normally necessary...

One of my favourite places in Caunes Minervois is La Cantine du Cure in the shadow of the Abbey. There is always a friendly face to welcome you and a little music keeping you company in the background. The staff are friendly and helpful and attentive and will assist you with your choice of fare - there is normally a choice of 3 or 4 tapas for €5 and perhaps 4 plats du jour (plate of the day)for €10 and normally ice cream for dessert.....
