The Wine estate Clos Centeilles is located in the very heart of the area “Minervois la Livinière”, 1st of the Languedoc’s “cru” to be recognized in 1999. Since 1995, Patricia Boyer-Domergue dedicated herself to reimplantation of old forgotten vines.

"Much has been happening at the domain, and with summer well underway it’s time to reflect and appreciate the scents of the Mediterranean garrigue and swallowtail butterflies that flutter harmoniously amongst the lavender. The cigales started to sing a week ago, announcing the arrival of some very hot weather.

Despite the lack of rain, (which I await with baited breath !) I’m very pleased with how the vines are coping. The branches of some of the Syrah are now 1,5m and it’s a marvel to see them dance majestically in the breeze. It certainly is a relief that we have so far managed to avoid the ferocious hail storms which have savaged other areas the country".

It’s not usual for me to present my wines for competition, but this year has seen an exception. My plans to venture out and to discover other markets led me to present my wines at various events. The results saw a gold medal for the l'Erme de Centeilles 2004 at the world Grenache awards, another gold for the Clos Centeilles 2009 in Hong Kong and only within the last month a silver medal for the Clos de Centeilles 2009 red at the world decanter wine awards. A great result all round !

It’s been a busy time in the winery. La Part des Anges welcomes us into the summer, and displays characteristics not often associated with a claret. The addition of Riveirenc N into the blend this year certainly makes an impression with notes of peony, cranberry and grenadine. Clos de Centeilles Blanc has also just made it to bottle and although showing great potential, is still rather closed.

My current thoughts are to allow it to rest for another 12 months, hopefully allowing the glory of time to do its magic.

Meanwhile the restoration work continues. The project of building the new winery has revealed some fascinating rock formations which I have decided to leave exposed as an insight into the quality of the subsoil and terroir. It will be the ideal place to discover the old vintages"...

A.O.C. Minervois

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

There are thousands of grape varieties contributing to a vast array of different wine styles with each variety having its own distinct flavours and characteristics. Varieties can be made uniquely to make a wine, in whch case the wine is known as a varietal, or collectively with other varities, when the wine is known as a blend. The soils and ‘terroirs’ in the Aude area are very varied, from Schist, Sandstone, Marl, Gravel, Pebbles, Limestone, to Granit and Alluvial soil; thus making many marvelous and different styles of wine. Also in this massive area are many different grape varieties, the reds include Carignon, Cinsault, Granache Noir, Syrah, Mourvèdre, Cabernet Franc, and Merlot. The whites, Chardonnay, Granache blanc, Picpoul, Marsanne, Roussanne, Vermantino, Mauzac, Chenin and Clairette...

Situated 2km from Caunes, Notre Dame du Cros is a remarkable site with a chapel dedicated to the worship of the Virgin Mary. Following a miraculous cure by the spring water, three small dry stone chapels were built on a steep slope with three statues, the Virgin Mary, Saint Joseph and Saint John. This is the origin of the pilgrimage of the Cros. A larger chapel had to be built as the number of devotees grew. Pilgrimages and processions were regularly organised to coincide with the feasts of the Assumption and the Nativity and the relics of the Caunes martyrs were associated with processions asking for rain, for the protection of the harvest etc. Religious rituals were also observed during Easter week. A few pilgrimages and celebrations have survived to the present day, specifically on 15 August and 8 September. Inside the church, the chancel is lavishly decorated with paintings framed with marble and gilded wood and the beautiful communion table, pulpit and font are all made of marble...

Using dioramas (original figurines presented in various scenes), the museum tells the story of the tragic saga of the Occitan Cathars. In the 13th century, the catholic princes, spurred on by Pope Innocent III, decided to put an end to Cathar influence in the provinces of Languedoc, Simon de Montfort came to impose the law and the catholic faith in Languedoc by force and fire. The local barons and knights then took up arms to defend their land, their faith and their culture. Following many years of combat, they lost their independence and were forced, in humiliation, to witness the martyrdom of the Cathars under their protection, who were burnt at the stake on enormous pyres...
