Chamans is a Parker and Robinson-rated family-owned vineyard that sits in the south facing foothills of the Montagne Noire in the Minervois region of the Languedoc. Isolated from other vineyards, we can pursue our own non-interventionist farming philosophy, based on organic and biodynamic principles. EcoCert and Demeter certified (since 2010). Our symbol, the black sheep, is there to remind us the Languedoc is a region that offers the opportunity to make exciting wines if you don’t follow the crowd.

The composition of the soil is mainly limestone and clay with different pieces of slate. The advantage of clay is that it retains moisture, essential when you experience the heat of the Languedoc. The use of machines is minimal in order to prevent the adverse effects of impact on the soil. We have olive trees, lavender, beehives (important to create biodiversity) and a small flock of sheep. When the vineyard is asleep, they keep the weeds between the vines at a minimum and ensure natural fertilization. And yes, we have a black sheep.


Our symbol, the black sheep, is there to remind us that the Languedoc is a region that offers the possibility to make exciting wines if you do not follow the crowd...

  We grow our grapes biodynamically, treating the vineyard as a whole, to achieve balance through a relationship of the soil, native vegetation, bees and rhythms of the Universe. We compost, using organic manure and biodynamic preparations which, when spread on the soil, encourage a rich microbial life that in turn nurtures the vines.

Water is a precious commodity, so we collect rainwater from the roof of the Cave via water butts which feed into a large underground container. This softer water increases the efficiency of each preparation when it’s dynamised. Working with the Biodynamic sowing and planting calendar, tisanes and specific Biodynamic preparations, we have noticed, not only an improvement in vine health and resistance to disease, but new densities of flavours and liveliness - harnessing the taste of Chamans.

Our red wine grape varieties range from 8-60 years old. Grenache/Syrah/Carignan/Mourvèdre and Cinsault. For the white, we have 25yr old Marsanne, Roussanne and younger plantings of Grenache blanc, Clairette and Roussanne. For quality, the vines are pruned to produce 25-30 hl per ha.

All grapes are hand-harvested with additional selection on a table de tri and all wines are vilified, varietal by varietal in French oak barrels, foudres, concrete egg and concrete tanks – bottled with minimal use of sulphur.

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

There are thousands of grape varieties contributing to a vast array of different wine styles with each variety having its own distinct flavours and characteristics. Varieties can be made uniquely to make a wine, in whch case the wine is known as a varietal, or collectively with other varities, when the wine is known as a blend. The soils and ‘terroirs’ in the Aude area are very varied, from Schist, Sandstone, Marl, Gravel, Pebbles, Limestone, to Granit and Alluvial soil; thus making many marvelous and different styles of wine. Also in this massive area are many different grape varieties, the reds include Carignon, Cinsault, Granache Noir, Syrah, Mourvèdre, Cabernet Franc, and Merlot. The whites, Chardonnay, Granache blanc, Picpoul, Marsanne, Roussanne, Vermantino, Mauzac, Chenin and Clairette...

They serve well constructed meals, menus with choices & a la carte served with very reasonabley priced local wines. The warm welcome of the bosses, the decor classy and sober, daily menu renewed every day, garden products ... and the wine list at very reasonable rates. The gourmet menu (starter, main dish and dessert) is a feast! Opportunity to purchase wines from areas at the end of the meal. An address that we will refile word of mouth....

Located just down the hill on the main street, inside this is the local bar, while outside is a gathering place for tourists. A morning coffee can be fun. Buy the pastries across the street at the boulangerie, then order coffee. There's no problem with eating breakfast that you've purchased elsewhere, because the Grande Fontaine doesn't sell pasteries. An omelet and salad at noon can be very enjoyable and inexpensive, and full meals are available both at noon and in the evening. Reservations not normally necessary...

One of my favourite places in Caunes Minervois is La Cantine du Cure in the shadow of the Abbey. There is always a friendly face to welcome you and a little music keeping you company in the background. The staff are friendly and helpful and attentive and will assist you with your choice of fare - there is normally a choice of 3 or 4 tapas for €5 and perhaps 4 plats du jour (plate of the day)for €10 and normally ice cream for dessert.....
