We are pleased to welcome you to the Domaine Castel Negre in the heart of the cathar country, in the Upper Valley of Aude. With a view to protect the consumer, the environment and to offer wines of a great quality, our vineyard has been organic since 2008.

If you visit Castel Negre you will discover our "domaine" and we hope to share with you our passion for the wine from this land.

Castel-Negre spreads over 150 hectares, composed mainly of pine forest and holm oak. In 2001 we planted 500 olive trees amongst thyme, juniper and lavender in an area previously used as sheep pasture.

Vines cover an area of 14 hectares on two hillsides facing east/west. It is a young vineyard as we removed the original vines in order to replant with those better adapted and of a higher quality: resulting in lower yields but better flavour potential. The chalky soils of the domain had a major influence on the choice of grape varieties (clones and grafted).

You will find the Haute Vallée de l’Aude vineyards, part of the Limoux appellation, some 35 kilometres to the south of Carcassonne, on the D118 road between Limoux and Quillan. This is in the heart of the Cathare country.

  Specialties

The Haute Vallée is bordered to the west by the Corbières massif, from which it receives its Mediterranean influences, and to the east by the Chalabre and Razés mountains, which give it an oceanic character.

The ‘terroir’ of Castel-nègre allows a range of different grape varieties, offering very interesting combinations:
* Traditional grape varieties of the southern vineyards such as Syrah
* Traditional grape varieties of the Atlantic coast and the South-west, such as:
    - Merlot
    - Cabernet sauvignon
    - Cabernet franc
    - Cot Sauvignon
    - Colombard
    - Finally, Chardonnay, Chenin and Mauzac which are used in the making of Blanquettes de Limoux and A.O.C Limoux blanc.

Because we love our land and want it to remain 'alive', but also because we feel that you should be able to trust that the wine you are drinking is of the highest quality, we are now certified organic after several years of farming under the status 'agriculture raisonnée'...

Limoux is best known for its sparkling wine, Blanquette de Limoux. This is reputed to be the oldest sparkling wine in France and dates back to 1531 when Benedictine monks from Saint Hilaire Abbey discovered that the wine they had laid down had fermented and formed bubbles. This was the beginning of Limoux’s bubbly - the Blanquette de Limoux which was the first AOC to be created in the Languedoc area. The process (the locals say) was stolen by Dom Perignon who went on to create ‘champagne‘. however the Limoux sparkling wine is a very high quality champagne substitute and Crémant, which was developed in 1990, has a top class reputation. Now a prestigious event attracting buyers from all over the world, “Toques & Clochers” puts up for auction the most promising barrels of AOC Limoux. A share of the proceeds are then used to finance the renovation of bell towers in surrounding villages. Every year the auction is hosted by one of France’s great chefs popularly referred to as a “Toques”, the traditional white chef’s hat....

History tells us that Blanquette de Limoux, the world's first sparkling wine, dates as far back as 1531. At the time, the monks of the Benedictine abbey of Saint-Hilaire, near Limoux, were producing a somewhat unusual white wine in their cellars. Inside its glass flask, with a cork top - very rare for wines at this time - it acquired a natural sparkle. This was the forefather of the brut which is tasted today at the world's most prestigious tables. Since they first started cultivating vines, the growers of Limoux have aimed at maintaining the originality of the Blanquette de Limoux growth and developing its quality. The region's surrounding hills protect it from the extremes of the Mediterranean and Atlantic climates, with the area enjoying a microclimate particularly suitable for making quality white wine. The vines classified in the appellation are always planted at the top of southern-facing slopes, giving the best exposure. The soil here is shallow and sparse, full of chalk and stone....

Dinosauria is the first dinosaur museum in Europe. It has 3,000 sq m of exhibition space where you'll find a magnificent collection of dinosaurs, fossils of reptiles, mammals, invertebrates and plants from this region and throughout the world. From the Cretaceous Period glasshouse, which shows what plants were like 70 million years ago, you can get a direct view of researchers working in the laboratory. During school holidays children aged 6-12 can be shown excavation techniques and learn how to be real palaeontologists. The museum is open to the public in July and August. Restaurants and shops can be found in the village and there are great walks nearby as well as canoe hire facilities. On-site mountain bike rental is available....

This listed 16th century chateau is located on extensive grounds on the banks of the River Aude. The ancient fortress-turned-hotel subtly blends medieval tradition with modern confort - and it has an excellent restaurant too (it is important that you reserve a table in advance). The house was built by Jean de Joyeuse, first Governor of Narbonne and Lieutenant General in Languedoc, between 1540 and 1550, and his son, Guillaume III assumed the job of completing this magnificant chateau after he died. With a beautiful courtyard where one can dine in the summer months, the castle is a very special place to stay. With a swimming pool and tennis court, the hotel is a perfect base to combine relaxation with good food. Close to Cathares and 30 km to Carcassonne, there many cathedrals and historic monuments to visit. The Chateau does not have an elevator, so if you have a problem with stairs this may not be the best choice for you....
