For years, Claude and Jean-Luc Bohler dreamt of acquiring a small vineyard, where they could make an authentic wine, a “terroir” wine. When, in 1995, after two years of unsuccessful research, they travelled down from Minerve to the plain and discovered the “landscape” of the Domaine de Cantaussel; the calm, the beauty, the minerality and the harmony of the place seduced them immediately. The topography, the soil and the modest superficies of the vines (10 ha) also convinced them. The Domaine de Cantaussel is on sale, they are definitely going to settle down here!
Domaine de Cantaussel - Siran
This ancient domaine is located on the « petit causse », at an average altitude (300 m), nestled in a scrubland area, a few kilometres north of Siran, towards the west side of the Hérault county. The soil is composed of calcareous sediments as a result of erosions which have accumulated in a narrow combe, north-south facing. The poor earth vein and the source rock are located on a steep slope. The permanent fight against erosion had lead the elders to build, wherever the slopes were too steep, some terraces, held by riprap and dry stone walls patiently assembled over the centuries. This is where three farmer families living from polyculture once established themselves. As a heritage, they have left behind, the farmhouse dating from the 1700, the sheep pen and the stables, a threshing area, a bread oven, and an old olive grove… But the history of the area goes much further, judging by the remains of the gallo-roman oppidum, located on the domaine, on the summit of the Pic St Martin, and a few dolmens on the limestone plateau nearby...

  Formerly Cantaussel only produced small amount of wine, for family use. The former owner himself abandoned this activity and sold his grapes through the cooperative. There was no real winery and the facilities were rudimentary and obsolete. Not to worry. Claude and Jean-Luc Bohler decide to create a modern winery, following the principle of gravity winemaking. The winery’s architect Marcel Roger is in charge of designing it, and achieved the incredible challenge of finishing the project in less than six month. The winery is mainly underground, carved in the rock, with the upper level aligned with the vines. It became operational for the first harvest, in September 1996. Later on some restructurations of the vineyard were needed, in order to extract the best out of it, understand its personality, its secrets and expectations. The commitment is to always tend towards the best quality produce, maintain a small production, and respect the soil, the vines and the environment. This also means having to learn about the area, its climate, its characteristics and its people. But also to stand strong after the catastrophic storms of 1999 and fix the soil and the walls. Ultimately this is what it means to become winemakers.

The Domaine de Cantaussel is certified AB since 2014. Located in the Minervois region, the Domaine offers some unique, dense and complex vintages which wine lovers will enjoy.

Minervois

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

The cornerstone of organic farming is the soil. Maintaining a healthy, biologically active soil is the main objective for an organic farmer. In the vineyard it means cultivating the soil and planting cover crops, instead of applying herbicides. It means using natural fertilizers, such as composted animal manure, versus chemical fertilizers. Organic growers use no synthetic growth-regulators (such as Alar). As for not using pesticides, the organic alternative is to encourage natural predators of insect pests instead of using poisonous insecticides. Organic farmers promote "biodiversity" and allow plants other than vines to grow in and around the vineyard. Biodiversity helps regulate the vineyard soil by attracting beneficial insects, spiders and predatory mites, as well as provide shelter and food (pollen, nectar and other bugs), and replaces the need for chemical pesticides or insecticides. What cannot be fully controlled through biodiversity can still be managed organically, through the use of naturally occurring plant or mineral extracts, which leave no residues in the soil. In wet climates the main difficulty is raised by the use of copper sulfate against mildew, which leaves over time levels of copper in the soil that need to be monitored....

The dishes are prepared using a variety of local produce, including some organic products. In the summer you can sample seasonal local specialities accompanied by the best Minervois wines under the shade of the mulberry trees on the terrace. The restaurant also has two dining rooms for group bookings and can cater banquets for up to 200 people in the village’s community hall. From May to August, entertainment is provided in the square with music and a wine bar...

Minerve has been selected as one of Les Plus Beaux Villages de France (‘The Most Beautiful Villages Of France’). Historically, the village has been the capital of the Minervois wine region. The main bridge leading into the village is closed to all passenger vehicles not owned by residents of Minerve. Of all of the original fortifications, only a slender octagonal tower, known locally as the Candela, survives. The village is situated on top of the gorge of the River Cesse in a naturally strong defensive position. Near the village the river disappears underground in large, naturally-carved tunnels....

The restaurant "Ô portail Ô" is located on a nice square with a small fountain and tall trees which provide refreshing shade on hot summer days. The name of the square used to be "Place de la République", but is now called, how could it be otherwise; "Place du Portail Haut". The menu consists therefore of a surprising range of western and oriental delicacies.The chef, owner of the restaurant, has gained knowledge and experience in renowned restaurants in Belgium and is also passionate by the Oriental cuisine. The menu consists therefore of a surprising range of western and oriental delicacies. About 30 years ago the restaurant was a bar. Evenings with music and dance were organized. The clients used to enjoy also the use of the 'pétanque' track. For years the cafe was abandoned and empty until the new owner refurbished the whole building and opened the restaurant “Ô portail Ô”. There are still some original elements remaining like the underside of the bar, the floor and of course the enormous mirrors...
