Domaine Cailhol Gautran is set amongst the rolling countryside in the first foothills of the Massif Central. The hamlet of Cailhol lies in a valley carved out by a river – the Cessière. Like the river this joins – the Cesse – it cuts through the limestone Causse of the Haut Minervois. The vineyards lie around the estate within a radius of 3 kilometres. It is a scattered estate consisting of several vineyard plots of an average size of around one hectare. The vineyards are planted on a sunny, south-facing limestone plateau at an altitude of 200 metres.

Four generations of wine-growers have succeeded each other on the family estate. Originally, the “domaine” consisted of 7 hectares of vineyards. All the work was done by hand, with only horses supplementing human labour. In 1967, Christian Gautran, the third generation, innovated: he bought the very first tractor. The estate grew through the successive acquisition of vineyard plots.In 1997, the estate gained new impetus with the construction of the winery in the hamlet of Cailhol. The objective was to achieve a blend of traditional wine cellar techniques with a modern building and equipment. In 2006, Jeanne and Christian Gautran handed over the running of the estate to their son Nicolas. Today, Nicolas and his wife Olivia are committed to sharing their passion for wine. “We like wines that are fruity, elegant and refined, reflecting the high qualities of our terroir.” In 2017 they built a modern cave in the heart of the domain…producing wines without any sulfites, maturing in ceramic jars and oak barrels, the evolution is in all sides.

  We have traditional grape varietals for the Minervois. The white grapes are Grenache Blanc, Muscat Petit Grain, Marsanne, Roussanne, Terret, Vermentino,Grenache Gris and Roussanne. For the reds our vineyards comprise of Syrah, Grenache Noir, Carignan and Cinsault. In the spring of 2019 we planted our first plot of Mourvèdre. The estate has followed a policy of reasoned agriculture from the beginning. Today we have begun the conversion to having fully organic vineyards. The aim is to have vineyards in good health, where yields are voluntarily limited. Great emphasis is placed on protecting the environment: ploughing and tilling are kept to a minimum to avoid soil erosion and phytosanitary treatments are only applied when absolutely necessary. We give great importance to cultivating our vineyards: the vines are wire-trained and maintained with great care, while natural grass cover is retained in winter.
 
In the winery, we use traditional vinification methods. Therefore, we place great importance on the quality of our grapes because of this we do not use any wine-making equipment liable to modify the intrinsic nature of our wines. The whites are vinified by directly pressing the grapes, in addition we sometimes macerate the white grapes with the skins to extract maximum flavour. Similarly with the Rosés we directly press the grapes. However we must do so gently so we do not extract too much colour. For the reds, we use two different wine-making processes: – either the whole grapes are tipped directly into the vat: this is the carbonic maceration process, – or we destalk and crush the grapes before putting them into the vat. In this case, we use the rack and return process during the fermentation period.

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

The Curiosité de Lauriole is not a place where you can find something to buy or other interesting things, no it's really an insignificant piece of road with only an optical illusion. When we were there for the first time we looked everywhere for something special but did not find anything. After a little search on google we found an interpretation of this phenomenon. What you have to do to find the cache is just to find out the secret of the Curiosité de Lauriole. You can put your car at one of this coordinates and just set your gear in the free and leave the breaks... because of the optical illusion you will think the car goes that direction but it's not!!!

The local barons and knights then took up arms to defend their land, their faith and their culture. Following many years of combat, they lost their independence and were forced, in humiliation, to witness the martyrdom of the Cathars under their protection, who were burnt at the stake on enormous pyres...

During the months of July and August, Le Maquis is a holiday unique and joyful, often very lively at night, where there is a very friendly atmosphere. You can come alone (e), with friends or family, and be almost certain to leave pockets full address and cool memories. The camping area is spread over two hectares, dotted with trees and shrubs, all sites are shaded. It was concluded to be safe from the curiosity of the herd. Founded in January 2014 by Bruno, the place was taken over in June 2015 by Simon and Colin. Friendly and smiling, Col welcomes you for a simple refreshment or for dining with kitchen Ducky. At the bar, even on the patio it is pleasant on sunny days in the shade of the trees and the sound of crickets, enjoying the famous fish and chips, pizza, le croque du Causse or homemade burgers. Musically, Le Petit Causse organizes concerts every Saturday from April to October, most every Thursday in July and August and a few other summer off-season nights ... Under the leadership of Fan, the program always offers quality and different music styles to be able to meet so many of you.
