Our land, If you come to visit the domain, avoid wearing shiny, stiletto heals and “Sunday shoes”. The wines at Borie de Maurel hang on to the rocky slopes of the Black mountains. This land has always been known as le petit Causse. It’s so special that in 1999 the first appellation village of the Languedoc was born - . AOC La Livinière. The other particularity of the lands of Borie de Maurel is the diversity. To simplify, let’s say that this immense geological dump splits into two families: the hot soils with an under layer of sandstone, with accumulations of clay and limestone sediment with low water retention ; this is the favourite spot for the mourvedre, Grenache, carrignan and cinsault, the wines are generally heady and strong….- the high lands - which can be as high as 300 meters altitude, these long of fingers of scree of marl and limestone, ripped from the mountain by erosion and the ancient glaciers ; the part mixed with marble and slate, benefits from cool air descending from the peaks in the evening, after a stifling hot summers day. This meso-climate, linked to the topography, insures the maturity of the syrah or the marsanne which fills with all that mineral taste, so characteristic of Borie de Maurel. Its the expression of a “terroir” - the taste of the land. 

You have no doubt read our creed. So we’ve set the scene! By the magic of a couple of clicks you find yourself at the heart of one of the most astonishing wine producing lands in the world, La Livinière, the first of the appellation village of the Minervois and the Languedoc. Here you are in Felines Minervois, at the gateway to Borie de Maurel, on the land of the Escande family. Whether you know the wine domain or not you will always be made to feel at home. Take the time to discover the Mediterranean countryside, the arid scrub lands and bush covered heaths that surround our vines.   It’s a light that shines from above, powerful and complex, whose message we perceive by fragments. The universe of Borie de Maurel starts with the sky: cobalt blue, cleaned of the dust of life by the night rain; indigo, electric when the north wind fights against that of the burning south; anthracite, purple flushed as the storm hits the mountain; frothy grey and heavy if the sea is in turmoil, like a high tide of fizzy water, with its salty mass… The sky here in Félines is not only a fundamental element of the scenery; it presents itself as a superior principle.

It’s the heart of our story, when you get right down to it! All our ideas, all our work, all our hopes and our love are concentrated in these few centilitres of pleasure. Year after year the wines put our lives in bottles. Each represents one of the many facets of Borie de Maurel. Move from the spontaneous Esprit d’automne to the mythical Sylla, passing through the feminine Féline, the masculine Maxime and the enchanting Belle de Nuit, They tell all a "moment" of the domain. Without forgetting le blanc, La belle Aude which has just benefited from a rejuvenation treatment. Un-classable, a sparkling juice, designed by our son Gabriel, to give the young – and not so young – a taste for wine… Don’t hesitate taking a look at our old bottles in the winery in order to know more about our latest heart throb and about the present situation of old wines that you, your wine stockist or your favourite restaurant is preciously keeping at the back of the wine cellar...

Minervois

The Minervois is one of the most ancient vineyards of the Mediterranean region. Indeed, its land was chosen by the Romans as providing ideal conditions for the first vines they planted in Languedoc Roussillon. Its name comes from the ancient city of Minerve, a stronghold built by the Romans and dedicated to the goddess Minerva. Since that time, many amphora shards and vestiges of cellars have been discovered, testimony to the importance of this vineyard. The region, austere in winter and redolent with sunshine in summer, has survived over the centuries its invasions by barbarians, Arabs and Christians. The essence of Minervois la Livinière, as in so many Midi appellations, is the blend; a marriage of different grape varieties that adds subtle nuance of flavour to the whole. Natural alcohol level must reach a minimum of 12% without enrichment (so no chaptalisation) and maximum yield is a modest 45 hl/ha. Ageing may be in barrel or vat, and unlike basic Minervois, the wine must be bottled at source, so cannot be sent off to a négociant elsewhere in France...

The cornerstone of organic farming is the soil. Maintaining a healthy, biologically active soil is the main objective for an organic farmer. In the vineyard it means cultivating the soil and planting cover crops, instead of applying herbicides. It means using natural fertilizers, such as composted animal manure, versus chemical fertilizers. Organic growers use no synthetic growth-regulators (such as Alar). As for not using pesticides, the organic alternative is to encourage natural predators of insect pests instead of using poisonous insecticides. Organic farmers promote "biodiversity" and allow plants other than vines to grow in and around the vineyard. Biodiversity helps regulate the vineyard soil by attracting beneficial insects, spiders and predatory mites, as well as provide shelter and food (pollen, nectar and other bugs), and replaces the need for chemical pesticides or insecticides. What cannot be fully controlled through biodiversity can still be managed organically, through the use of naturally occurring plant or mineral extracts, which leave no residues in the soil. In wet climates the main difficulty is raised by the use of copper sulfate against mildew, which leaves over time levels of copper in the soil that need to be monitored....

Located at the foot of the Montagne Noire, in the little village of La Livinière, the restaurant, which seats 60, was established in 2009 by Jonathan Plieu.   The service is attentive and considerate and the cuisine is creative with expertly balanced flavours. The dishes are prepared using a variety of local produce, including some organic products. In the summer you can sample seasonal local specialities accompanied by the best Minervois wines under the shade of the mulberry trees on the terrace. The restaurant also has two dining rooms for group bookings and can cater banquets for up to 200 people in the village’s community hall. From May to August, entertainment is provided in the square with music and a wine bar...
